Cat Statue is a Saison brewed with oats and spiced with lemons, white sage, and Japanese knotweed. Conditioned in oak for a month.

Appearance: Pours a clear goldenstraw color with an impressive head, lots of streaks and dots of lacing linger
Smell: Funky, lemony and redolent of sage; knotweeed has a tart, lemony aroma so I imagine that is part of what I am smelling, too
Taste: The lemon and herbal flavors jump out and dominate, with tart elements building; bready malt underpins the overall presentation but takes a backstage role; oaky and somewhat vinous in the finish
Mouthfeel: Medium body with moderate carbonation
Overall: I can't say this is something I particularly enjoyed; it was interesting and I learned about an herb many consider to be a pest - I will cast my lot with those who would rather see it stay in Asia

I enjoyed this on tap at Tired Hands Fermentaria served chilled in a glass.
The color is golden with very good clarity and light white head and fine bead with ringlets of lace that stick. The smell has lots of herbal and citrus odor with slight earthy and tropical scent. The feel is light and tangy with yeast texture adding spice with medium high carbonation and slight acidity with crisp dry finish.
The taste is tangy with a citrus and tart tropical quality with slight hint of green herbal flavor with lght yest in the taste and hint of spice with low bitterness and alcohol in taste with lasting juicy aspect. Overall this is a great saison with lots of character and very drinkable with low yeast phenolics -'a crushable beer'
