Not sure why but all the bottles I saw at the release had a killer bottom wax job. Something I'd never seen before. 16oz. bottle into a Cantillon tulip. Shared with schen9303.

Pours a .5 finger foamy, coffee colored head with good retention. Beer is a very dark, nearly opaque mahogany. Lacing is stringy but layered with decent stick. Thin but oily legs. I'm hoping for a bit more lace and head from my Saisons for the most part.

Nose is dark fruit, rotting wood, roasted malt, with just a hint of sweet and tartness. Moderately aromatic.

Opens sweet and tart prunes, plum, and soy sauce. Some roast, more dark fruit and Brett notes in the middle. Pretty sour overall. End is ash, more sour dark fruit, and just a touch of woodiness at the finish. Aftertaste of bitter chocolate and cocoa powder. Decent.

Light bodied with ample carbonation. Lively and bubbly in the mouth and aggressive and coarse going down. Finish is messy with a lingering aftertaste. Solid.

Rare does not always translate to good and Guillemot Prunus is a great example of that. I've heard a lot of Tired Hands hype in recent months but this is not their best work. Decent but not worth going out of your way for.

500 mL bottle poured into a snifter.

Appearance - Dark brown body. Slight transparency at the edges. Not much of a head. Thin collar.

Smell - Brighter fruit than the Nebula version. Cherry and brighter raspberry. More acidic. Minimal roast.

Taste - Bright fruit. Cherry and raspberry. Muted roasted malt presence. More acidic and dry. Wine notes in the back.

Mouthfeel - Much drier than the Nebula version. Doesn't allow the malt flavors to come out as much.

Overall - Very similar, just some subtle differences. More emphasis on acidic and fruity components here.

I was lucky enough to have this side by side with the Nebula. Poured from the bottle into a tasting snifter.

The beer pours a dark brown color with just a small amount of head. The nose is sweet and reminds me a bit of brown sugar. I'm also getting cherries and mild oak. The taste tart but the sweeter notes are still there. Cherries are showing up, but there is also a dark fruit note in the background. I'm also getting some oak. The sour note builds to the finish. Not sure I would have guessed Saison. The body is medium with tingly carbonation and a dry finish. I enjoyed this more than the Nebula due to the sweetness.

So this is another beer in the Guillemot family. Let's see if I get this right: a Baltic porter base, fermented with house saison yeast in a used Weyerbacher Insanity barrel with 45lbs. of local wild cherries. Sounds about right. Bouncing between style borders, I'll call this a wild ale for convenience's sake, though I expect it to be changed to a saison.

I only had a small sample of this, so I eagerly await it when it's officially released. Although I was looking forward to this one more, just because of its uniqueness, I actually preferred the Nebula quite a bit to the Prunus. But again, I await a full bottle for a more accurate tasting.

Poured into a wine glass, a deep maroon-brown color with a ringlet of bubbles around the edge. Aroma contained hints of roasty malts, mild grassy funk, somewhat tart cherry notes. The taste wasn't nearly as tart as the Nebula, but there still was a bit of tartness there from the cherries, a light vinous quality, chocolate and grass with a coffee-like malty roastiness, and quite distinct barrel notes evening everything out and providing a dry, woody finish. There's a lot going on here. Again, this was just a first impression, but the mouthfeel seemed a bit on the thin side, maybe light-medium. While it didn't make as good an impression on me as Nebula did, this was still a tasty brew, well-crafted, and highly unique. Can't wait to try it again.
