I split this with my cousin, poured into snifter, pitch black pour, medium head, light lacing. The aroma is tart, funk, sour cherries. It taste like a sour stout, vanilla, booze. The carbonation is good, medium body, suprisingly drinkable. A very interesting beer, wish I had another.

I was lucky enough to have this side by side with the Nebula. Poured from the bottle into a tasting snifter.

The beer pours a dark brown color with just a small amount of head. The nose is sweet and reminds me a bit of brown sugar. I'm also getting cherries and mild oak. The taste tart but the sweeter notes are still there. Cherries are showing up, but there is also a dark fruit note in the background. I'm also getting some oak. The sour note builds to the finish. Not sure I would have guessed Saison. The body is medium with tingly carbonation and a dry finish. I enjoyed this more than the Nebula due to the sweetness.

Tired Hands wine glass (split with 3 others)

A: Pours a deep brown color with reddish hues. This might be a touch lighter than the Nebula, which we did side by side. Collar of light tan head. Not a lot of lacing. Carb is lower on this beer than the other, but seems to be there. Some alcohol feet.

S: Big cherry on the nose here, and I like it. Sour cherry pie filling. Some funk, mild. Some cocoa. Maybe some of that oaky vanilla character. Looks like they pulled some good character out of the Insanity barrels.

T: Cherry tootsie roll....but not as tart as ToD or Funk Metal. This drinks more like a sour stout as I've had from others than a Saison. It's nice though. Tart cherry up front on the tongue. In the mid-palate, you are getting the malt bill. Again getting some spices and some cocoa notes. Dry close on this one. Lingering cherry flavors dance on your tongue. Like this more than Nebula faintly.

M: Medium bodied. Better carbonation.

So this is another beer in the Guillemot family. Let's see if I get this right: a Baltic porter base, fermented with house saison yeast in a used Weyerbacher Insanity barrel with 45lbs. of local wild cherries. Sounds about right. Bouncing between style borders, I'll call this a wild ale for convenience's sake, though I expect it to be changed to a saison.

I only had a small sample of this, so I eagerly await it when it's officially released. Although I was looking forward to this one more, just because of its uniqueness, I actually preferred the Nebula quite a bit to the Prunus. But again, I await a full bottle for a more accurate tasting.

Poured into a wine glass, a deep maroon-brown color with a ringlet of bubbles around the edge. Aroma contained hints of roasty malts, mild grassy funk, somewhat tart cherry notes. The taste wasn't nearly as tart as the Nebula, but there still was a bit of tartness there from the cherries, a light vinous quality, chocolate and grass with a coffee-like malty roastiness, and quite distinct barrel notes evening everything out and providing a dry, woody finish. There's a lot going on here. Again, this was just a first impression, but the mouthfeel seemed a bit on the thin side, maybe light-medium. While it didn't make as good an impression on me as Nebula did, this was still a tasty brew, well-crafted, and highly unique. Can't wait to try it again.
