A: Deep mahogany to black with a pale brown, thin fizzy head that dissipates fairly quickly
S: Acidic with slight vinegar, bread, and dark fruit notes
T: Bread, fig, plum, black pepper, sour cherry, slight char/wood, malty toast/rye
M: Light body, fizzy carbonation up front but fades quickly
O: Excellent black sour, probably my favorite example of the style (I typical prefer golden sours). Rye spiciness/char is very well balanced with a subtle malt sweetness and deep acidity and complex dark fruits.

From a 750 ml bottle (batch 2) into a tulip.
A-The beer pours with almost two fingers of light-tan head. The foam fades quickly and leaves no lacing. The beer is quite dark in color, a sort-of midnight purple that is nearly black. It is strangely pretty and appropriately "metal" for TRVE.
S-The aroma is sour with some nice, tart berry fruit (I get some bing cherry and blackberry) blending with a lemony, lactic sourness. I also get a bit of vanilla in there. It is less roasted smelling than other "black" sours or sour stouts. Funk is light to moderate and oaky, rather than barnyard or horsy.
T-The taste is similar to the aroma, if not better. I still get some berry fruit, lots of lactic sourness, and some vanilla. The beer also provides a bit of earthy malty sweetness (think prunes and figs) on the mid-palate. The malty flavors, while not too sweet, provide a nice balance to the sour flavors.
M-The feel is medium body with chunky carbonation that is quick to leave the palate. A nice feel for the style and flavors.
O-This is a pretty good effort and probably my favorite from TRVE. It is balanced, complex, and drinks easily with food. At times, the malt profile makes you think you're sipping on a Tart of Darkness, but other sips suggest something lighter and less roasted, like a dry flanders red. The balance and light touch in this Winter Zephyr may actually make this beer better than Tart of Darkness.
