"....brewed with White Labs American Farmhouse yeast strain which is a blend of American Saison yeasts and Brettanomyces...dark malts and dark candied syrup ( f/dates) for color and sweetness...the yeasts become more complex with time, and get more tart..."
Pours very dark brown into Relic pint glass. 1 inch beige head quickly fades to skim.
Aroma is sweet, with dark fruits and must, and an herbal sharpness that cuts through it all.
Some initial sweetness on the tongue quickly gives way to some bitterness and unusual flavors. Some mild dankness present, in an appealing way. Leaves the mouth rather dry and, well, not sure what else creeps up in the finish...Taste is certainly funky, but not overly so.
Overall, an interesting take on a dark saison from a brewer that is gaining a very respectable following in the central Connecticut area.
