Pretty renowned Vermont landmark. The food is absolutely outstanding and the tap list is pretty impressive. The brewery is attached to the restaurant in a separate space. Great staff, quick service. Growler and crowler fills available. (235 characters)

this place is awesome, a longstanding local favorite and in the building that used to house the alchemist. it looks like they have upped their game from an epic tap list to a brewery, located in the building behind the restaurant right there in Waterbury. making something like ten barrels at a time, and doing it well. the brewery has a cool old farm house feel to it, with a big bar and some outdoor seating, and you can order the amazing food from the restaurant in there. the restaurant is an awesome building too, with a library ladder behind the bar, one of the best tap lists in the state, and some really great Vermont food, barbeque focused, but not exclusively. I had three of their beers while I was in, and all were very good. they are always busy, so its hard to get very personalized service, but everyone was nice and working hard. they had as many as eight of their own beers on, some creative and some straight forward. the vanilla bean porter was great, as was the brown ale. for the food and the guest taps alone I will be back, but their own brewery should not be overlooked, a great building with some very solid ales. make a point to check it out next time you are there. (1,193 characters)

enjoyed the visit. food was good, pretty solid selection on tap and a nice place but the service (at the bar) was poor. had a bartender that was a little rude...i get that she probably gets annoyed of tourists coming to the bar and asking about heady, HF, Lawsons, etc. but my wife and i generally get along swimmingly with just about every server/bartender we meet and had just left the Rez where the bartender was super friendly and we loved chatting with her... (466 characters)

This might be the most over-hyped restaurant in the beer community.

The food is expensive and disappointing, as is their beer.

Close by to the Alchemist brewery (Heady Topper) in Waterbury VT and Trapp Family Lodge brewery in Stowe VT. The Prohibition Pig is probably equal to Max's Taphouse in Baltimore and Falling Rock in Denver as far as the quality of micro brews it offers, and the food is out of this world. Just looking at their food pictures will make you drool. You also have a couple of other pubs right near by if you want to bar hop. In addition you have a new Craft Beer Cellar right next door where you can buy all the really hard to find brews. (534 characters)

Great food and great beer menu. Have had HT and Focal Banger in cans and a great draft list the last 4 or 5 times I have visited. Their house brews are also tasty.

The food is high quality. There version of a BLT is excellent. Called the GLT. Uses guanciale that is made in house (cured pork jowl, fancy bacon!!) with fried green tomato and arugula. Dry rubber wings are great and come with fantastic house made pickled carrots.

Draft list is global typically. Options from local, the US, and some of the best from Europe are usually available. Also have a half dozen or so of their own brews.

Bottled beer list is very well selected and has options from every country/region that one would desire (IMO).

They also pay special attention to their spirit offerings. Lots of great quality scotch options at reasonable prices.

Overall a place worth hitting while in Waterbury, VT. There are many, pace yourself. (924 characters)

Hands down the best spot for food and amazing beer in Waterbury. Love spending time drinking all the Hill and Lawson's you can imagine as well as Pro Pig beers and all sorts of other great VT and North East offerings. Amazing cocktails and super friendly staff also make this a great spot to spend your entire day. (314 characters)

A must stop, especially because you're probably stopping at Craft Beer Cellar across the street anyway. Had the carnitas tacos and they were off the hook. Really friendly service. Both beer brewed in house, as well as others on tap (including Lawsons and Hill Farmstead). Need to stop in here if you're doing a VT beer visit for sure (or even if you're not). (358 characters)

Had my first visit here last weekend. Great place! Not many places where you can get Zombie Dust, Heady Topper, Double Citra and an array of other Hill Farmstead choices. Our food was excellent, too. We will be going back. (222 characters)

Review is for back of the house brewpub.

Visited on a beautiful spring day. Log cabin/shed vibe inside, but it was too nice a day to sit inside. Fair amount of outside seating. About 12 or so taps with a mix of in house and guest. Only disappointment was the food. Ordered some of the snack items (pretzel knots and guac/chips) and it was well below average (funky pretzels, overly sweet mustard, bland guac, and chips that tasted like cardboard). I'll chalk that up to not ordering from the main menu.

Visited twice, once the front of house and once the brewpub. Both were great experiences. Much nicer food selection in the front of house but the athmosphere is more enjoyable in the brewpub. Had a few of their drinks and two meals. Great service and very good brew on draft. (275 characters)

Enough can't be said for this establishment, great staff, great food and a deep selection of some local beers...I didn't want to leave!!! Their brisket was delicious and they also put out a killer burger too! Did I mention Lawson's and Hill Farmstead offerings on tap, as well as cans of Heady Topper? I shall return! ! (320 characters)

Stopped in here during a short Vermont beer road trip. The food was excellent, fried pimento cheese balls are great, very good burger and spectacular brisket. Reasonable prices too. Great tap list, they serve half pours, which really helps if you are looking to try everything you can. They only had two house beers on tap, but they were both quite good, in fact their session ipa was as good or better than anything I had from the much more famous breweries I visited earlier that day. (489 characters)

My favorite restaurant in Vermont. Always an amazing beer list (including half pours). Their food is ridiculous - try the chopped pork with their north Carolina vinegar sauce.

Had pork rinds for the first time ever here - how did I not know about these? (256 characters)

Visited both the front restaurant/bar and the back brewery/pub. Both are great, with the front having the fuller menu and bar. Great food and drinks at the front. Service was excellent and everyone was super friendly. The brewery was far more laid back, much slower speed and quieter. The menu is limited and the beer is just their brews. No problem, still all great. When we were there the food prep guy was in the zone...madly making tacos and pork sandwiches. The staff were friendly and laid back, chatting with folks and making sure everyone was happy.

If you go...make sure to check out both the front and the back if you can. (641 characters)

Stopped in for a late lunch after the Cabot/B&J tour double with the kids. Really nice atmosphere; ceiling-high stocked bar, rich dark interior without being dingy.
The food was simply outstanding; I had the GLT (Guinciale, lettuce and tomato) with a side of duck fat French fries. One of the most delicious sandwiches I can ever remember eating; my only complaint was that it was a little small, and I would have been happy eating two! My wife was similarly happy with a burger.
There's nothing else that can be said about the beer selection. My huge disappointment was that they were sold out of Heady Topper. The Hill Farmstead Citra that I had to settle for was outstanding; I only hope that I eventually get
to see what the fuss is all about with HT! (761 characters)

We beat the rush on a Friday night and were seated right away.

Great vibe in this place with a fantastic beer menu and great food as well.

Our server was awesome. Knew the food and the beer inside and out. Made some great recommendations and was very attentive.

If this place was 20 minutes from my house I'd be there three times a week.

Beer lovers mecca. Expect 2-4 Hill Farmstead beers, 3-5 Lawsons beers and most times Heady on tap plus a bunch of amazing stuff from across the country and a few international beers on tap. Weekends can get a bit crazy with the wait but the food is really good. Great bbq, appetizers and burgers. Hit up the craft beer cellar across the street after to bring home a few bottles. (378 characters)

For beer enthusiasts that make their way to Waterbury due to its proximity to and convenient location as the center of the "IPA Highway," it doesn't get much better than the Prohibition Pig, given its long history with John Kimmich (if you call here after hours, the answering machine still courteously provides you with the number to the Alchemist Cannery) and the fact that you can find all three brews of the VT IPA trifecta here almost every day of the week, given that the day of the week is close to a Lawson's distribution day.

But for those of us that are IPA-impaired, much like my friends who didn't want to make the 400-mile ride up here with me; Prohibition Pig is probably "the spot" in Waterbury, VT -- come here on a weeknight and you will find yourself amazed with all the people that have all seemingly come out of nowhere, given the size of Waterbury, VT.

The people, however, show up for good reason -- as you may have surmised from the many reviews before this one, ProPig serves up some awesome barbecue, has a great selection of smoked meats, which includes a rotating charcuterie menu, and of course, everything and anything conducive as food worthy of pairing with some of the best beer to have graces this earth, all made and cooked up with ingredients from the Green Mountain State.

I came to ProPig for both dinner and Friday lunch, and it was easily the best meals I've had all week (at least on the American side of the border); my only regret is that not every town in the world has a Prohibition Pig of its own -- it could very well be the solution for world peace.

For those of you that are tl;dr:

-Heady Topper / Numerous Hill Farmstead / Whatever Sean Lawson brews and puts out that week is served here
-Great American fare with fresh Vermont ingredients
-Awesome barbecue

Do yourself a favor and make this a pit-stop after you're done standing in line at Hill Farmstead and are just irritated, tired, and hungry enough that you're willing to eat just about anything. You'll feel like a god among men for having eaten here. (2,063 characters)

The food here is pretty damn good. Everything I had was delicious. Seriously, I think this is some of the best BBQ I've had. Atlanta needs to step its game up.
The beer selection was phenomenal, but I was there during the weekend of the HF anniversary tap takeover. Still, the tap selection beforehand was solid. It's hard to have a crappy tap selection when you have access to Alchemist, Lawson's, and HF on the regular.
The staff was hit or miss; some of them were great while others... not so much.
Overall, this was the only place I visited multiple times during my stay in Waterbury and I will definitely be back again the next time in the area. The food and beer selection are the best in the area, in my honest opinion. (727 characters)
