Inspired by the artful ways of Brugge, West Sixth continues to tinker with the fruit, spice, earth and effervescence that make those Belgian ales so characterful, complex, creative and charming.
The Ale of the Universe pours with a pale straw color and with a modest haze. As a creamy white cap emerges, its retention is steadfast during the first half of the session but falters in the later. Light speckled lace left behind keeps me wanting a little more from the beer's overall appearance.
Its aromas open with a mildly floral and tangy scent of citrus and orchard fruit. Oranges, lemons and apples leading the way with a mild acidic note of white wine. Balancing pepper and grain give a counterpoint to the fruit with light coriander, clove and lemongrass. All this dances above a light cracker-like and slim wheaty-sweet scent.
Much the same transpires in taste as the bready malts carry a short candied sweetness and fresh baked barley. But once the taste crosses the middle palate, the sweetness fades and the balance of fruit and spice follow. Apples, clove, oranges, white pepper, lemons and coriander all add a playful tangy and earthy interplay to the beer's overall taste. Finishing with a hint of lemon pepper and straw, its slight bitterness gives the beer a clean and crisp finish with echoes of riesling.
Mid-light in body, the beer's stern carbonation gives a lift to the malts and amplifies its peppery quality. Its racy acidity is champagne-like as the ale finishes with mild minty warmth and light grain-derived astringency.
The Ale of the Universe carries a lofty namesake, but its actuality is a fairly common taste when an American brewery dips their toes into the Belgian world. All the earthy flavors, peppery spice, fruit and effervescence is just a bit muted, but is all in tact.
