This beer is retired; no longer brewed.

his is our first experiment using Brett as a primary yeast (meaning that this beer was only fermented with Brett, instead of brewer’s yeast and then Brett later on). The results are subtle and delicious, producing fruity flavours that mingle well with the tropical character of the Galaxy hops. Not to be confused with our barrel-aged Brett beers, which go through the more typical long secondary fermentation.

Instead of tart funky flavours, Brettal Head showcases all the complex fruity notes you can hope to attain through an all-Brett fermentation. With lots of hoppy aromatics bordering on blueberry and tangerine with a light refreshing flavours that skirts bitterness in favour of a crisp zestiness.

On tap @ Bar Hop.

A - Cloudy medium yellow with a thin layer of white head.

S - Citrus, pine,funk, some caramel

T - Fresh pine with some grapefruit. Brett comes in mid palate adding slight funk and dryness. Not much caramel (opposite of what the nose indicated)

M - Medium body. Dry. Slight oily. Moderate carbonation.

Note that while the site lists this as 6.6% the bottle indicates it is 5%.

A: Pours a very hazy yellow straw with 2 fingers of bone white head which lingers leaving small amounts of lacing. Rustic and inviting.

S: Yeasty notes reminicent of rising pizza dough with notes of lemon juice and saltines. Malts play a strong role, with pale caramels, balacing out the yeasty and light hop notes. Slight hints of a light funkiness on the finish. Much less funkiness than I expected but well balanced.

T: Taste follows the smell with yeasty bread, lemons, light pepper, pales malts and hints of brett funkiness. Refreshing and clean.

M: Moderate body with light carbonation.

O: While the Brett notes were much more reserved than what I expected out of a fully Brett beer, the yeasty bread and lemon notes makes this a refreshing summer beer that would pair well with a light meal.

On-tap at Bar Hop during the GLB/Bellwoods takeover.

Beer is a dark, opaque golden orange. Small white head, fades quickly. Nice amount of lacing.

Not a big smell, but fairly nice. Floral, with some fruit and some Brett. I get green grape.

Brett provides some dry funk, with the wheat providing a bubblegum flavour. Seems like some coriander, though I doubt any is in there. I don't find the hops to be particularly strong. A bit of citrus, but not much.

Medium bodied, moderately carbonated. Fairly astringent.

Overall, not bad, but disappointing for me. I hoped for more from this one.

The bottle says its an 'All-Brett American Wheat Ale'

Pours hazed gold with a dense, meringue like white head that quickly dissipates to a patch. The aroma is an enticing mix of lemon and apricot with a herbal, leathery brett edge. Fruit salad complete with grapes and melon mix with a chalky, slightly funky yeast character and a sturdy, doughy malt balast in the taste. All the flavors are quite mild and nuanced, but combined together make for a very complex beer. The mouthfeel is light bodied with a moderate carbonation, not as spritzy as expected. The finish is white grapes, crisp wheat notes and a very low bitterness.

Im surprised that brett can ferment to almost 7% without imparting more funk - shows what I know. There is funk there, but its very restrained and complimentary to the other flavors. A nice wheat beer with a very interesting edge - definitely worth a try.

Brettal Head pours with quite the head; its dome is bleach white, finely pearled, and encases the beer like a hard rind around cheese. It provides the glass with a similar service, practically entombing it in glinty netting. The beer is awash in bubbles and shines a bright, pale golden.

The aroma reveals fresh pine and grapefruit zest with just a whiff of new leather. There's a good amount of citrus and, by extension, perceived acidity. There's also a considerable breadiness that soaks some of it up; malts are well represented despite such a noticeable hop presence.

The combination of citrusy hops and tart Brett makes for a very lemony flavour profile. I'm getting notes of bubblegum too. The use of "wild" yeast notwithstanding, this retains the same familiar, approachable, refreshing characteristics as your workaday pale ale. It's pretty quenching and, especially at the standard 5% alcohol, is an absolute no-brainer for patio season.

The palate is treated to a good deal of fruit, most of it sharply citric - orange, grapefruit, lemon - but there's a tinge of sweet, tropical fruits too (pineapple, dragonfruit). The aftertaste is something of a kiwi/pear combo and plays beautifully with the bready sweetness of the malt.

Contrary to what many beer geeks believe, "interesting" does not always trump "good"; this all-Brett pale ale is a bit of both (and not terribly one or the other). At this point in its development the yeast is playing merely a secondary or background role, providing light tartness and a tinge of funk, while hops still lead the way. I have my doubts it will benefit from any time in the cellar, but those willing to try it let me know how it turns out...
