22 oz bottle poured into a 3 Sheeps glass.
6.2% ABV, 2014

A - Perfection in a pint, the first series of 3 Sheeps' Nimble Lips, Noble Tongue is a gorgeous IPA that's a slightly hazed caramel amber color with an everlasting white head. The tall pile of foam plateaus to a lumpy cap of suds while shrouding the glass in thick lace.

S - The blend of oak spirals this IPA is aged on takes over the aroma with a combination of raw, earthy wood with notes of bark, virgin oak, and a suggestion of charred barrel that also adds a faint whiskey note. The oak's earthiness compliments the hops' additions as well as the underlying toasted bread nose spread lightly with stone fruit jam. As it warms up fermentation carbon dioxide leads into light wafts of infused cigar cedar humidor escape for even more depth!

T - Bready, caramelly-sweet malts give the beer a nice firm base and opens the flavor with smoothness, quickly overcome by oak complexity that closely mirrors the aroma with a focus on the virgin wood. Hops almost become an afterthought in flavor though, as the soft fruitiness reminiscent of dried apricot and peach pits succumbs to the overarching oak flavor.

M - The beer's smooth entry carries through the medium body where hops regain control and, with the aid of oak, leave a lingering dryness on the tongue with a delicate bitterness creeping up on the back end.

O - 3 Sheeps' first release in a new (and exciting) small batch series is a delicious beer but also a signal of great things to come. The blend of oak spirals this IPA is aged on does wonderful things to the aroma and flavor, imparting complex earthy wood tones that compliment the malt and hop combo. While the hop ratio seems a little low, the slightly earthy notes and stone fruit characteristics they offer are delicious and give the beer terrific balance.

Reviewed from notes. 2014. Bomber.

A: Pours a slightly hazed golden with a solid 1-inch thick off-white head which fades slowly leaving splotchy and spotty lace.

N: Citrus (oranges mostly) and bready malts.

T: Malts dominate over the hops on this one. Some citrusy notes do come through.

M: Moderate body and medium carbonation. Semi-dry and bready, dry finish.

O: Not amazing, but not off either. Decent and enjoyable.

poured 22oz bottle into snifter.

A - Clear burnt orange with big 2.5 finger eggshell white head and superb retention, drops to a thick collar. Lacing coats the glass in large webs. Looks gorgeous.

S - This smells like a blend of wood, earth, and citrus. Oak, earthy and big notes of grapefruit citrus hops. Some sweet bread is also inviting, very nice aroma.

T - First and foremost I get a quick, sweet taste of bread and malt, with some oak notes. This is quickly cast aside to let the bitter citrus hops into play, with grapefruit, some pine and hints of earth.

M - Medium body with a slick, oily feel. There is definitely a bitter quality from the hops and oak.

O - A creative and complex IPA that stands out. I like what 3 Sheeps has been doing and they are definitely a brewery I will keep tabs on. This IPA turned out quite well.

From notes on 4/29/14

Had a bomber of this on 3/10/14. I thought this was a great beer. Love the added complexity the oak added to the IPA. I thought it was very similar to Really Cool Waterslide. Slightly better. My only complain is the cost. At $9 a bomber, I’d rather just spend the $8 and get a 6 pack of Waterslide. 4/29/14: Tried this on tap, and it was even better. Still think the bomber is over priced, but for $4 on tap, I could not go wrong. So much more citrus taste. The smell was so strong, people could smell oranges across the table. On tap, this beer is even better.
