Got this during Mad Craft Beer Week, at Buck and badgers. Actually it's the Imperial version "My Name Is Joe": 7.7% ABV, brewed with local coffee roasted especially for this brew according to the bartender.

Beautiful pour in a goblet, black-brown, with an off-white fluffy head that leaves a permanent lacing stuck on the glass. Aroma is burnt coffee and a sweet something.

In the mout iit's all iced coffee, sweetened as if with sugar from the table. Refreshing on the tongue, medium to light body, with the perfect sharp carbonation.

Pretty good stuff that'd be a lot better if not so cold. Served with a smallish, tan, foamy, thick, creamy head that slowly settled and lots of sheeting lace. Color is an opaque brown black. Aroma is malt and roast. Flavor's like nose, with good balance between bitter, sweet, and tang. Body and carbonation are good. Finish is like flavor, slightly long, and very drinkable. Again there'd be a lot more interesting things here if it weren't so cold. Still, good stuff.

This pours a dark brown/black color with a slight, off-white head. The aroma is slightly robust with burnt starches and molasses. The taste is fairly heavy and complex. There is a lot of roasted flavor mixed with some coffee a slightly bitter hop finish. Pretty decent brew for being a newer brewery.

Three Sheeps' black wheat beer smells and tastes like a stout that apparently uses a variety of wheat malts along with barley. This comes across as an enjoyable, baker's chocolate and heavily toasted bread-forward beer that would be good to get again if one was looking for a stout-like wheat-based beer.

Pours a fairly towering and ever-expanding head, dark beige in color, made up of large-sized bubbles for a very dish soap like appearance. Retention is excellent, the head lasting several minutes before falling to a thin ring around the perimeter of the glass. Lacing is not present. Beer is a dark brown to black in color, with light bringing out lighter brown hues around the edges of the body. Carbonation visible along the sides of the glass, but not through the opaque body, high in number andn activity.

Aroma of low base malt sweetness, notable roast malt that gives some dark chocolate, cocoa powder, and darkly toasted bread, along with minor phenolics from the yeast that clash a bit with the roast, but are low enough to escape being unappealing.

Front of palate tastes light sweetness mixed with roasted malt characters (cocoa, charred toast) and slight yeast phenolics. Mid-palate of roasted malt contributing some dark chocolate, cocoa, charred (but not burnt) toast, and phenolics from yeast that are not necessarily in line with the other flavors, but are low enough to escape detracting significantly. Back of palate experiences smooth roasted malt giving a bit of baker's chocolate and charred toast, with phenolics in the background. Aftertaste of roasted malt that gives some dark chocolate, light sweetness, a bit of charred toast, and light bitterness from roasted malt.

Beer is medium-light in body, with carbonation of medium-high intensity, resulting in a slightly fizzy, then foamy (3/4) and smooth (1/4) mouthfeel. A bit less carbonation would probably benefit the beer. Closes dry, with low to moderate stickiness clinging to the palate.

Thanks to GRG1313 for sharing this one at his tasting.

Pours a clear dark brown with a foamy khaki head that settles to wisps of film on top of the beer. Tiny dots of lace form around the glass on the drink down. Smell is of roasted malt, wheat, cocoa, and slight char aromas. Taste is much the same with char and cocoa flavors on the finish. There is a mild amount of roast bitterness on the palate with each sip. This beer has a lower level of carbonation with a slightly crisp and medium bodied mouthfeel. Overall, this is a pretty good beer that has a slightly better taste in my opinion.

Poured into a pint glass.

A- Pours pitch black, with a fast white head. Looks a little thin but for the style I would say it's good.

S- Coco, bananas, wheat, roasted coffee and dark fruit. Has a wheat smell with a porter backbone.

T- Nice roast flavors. Chocolate and dates. Has some banana in there as well. Very good.

M- Smooth and refreshing. Has a good body and active carbonation. it doesn't stick around to long, so you'll have to take another sip.

O- A good beer. Not a fan of wheat's but the roast quality add a dimension I like. I'm glad I got to try this.

Served in a Lagunitas mason jar.

It took me three of their beers before 3 Sheeps gave me some sort of ovine pun? Disappointed... Anyway, this stuff pours a deep midnight sienna topped by a finger of relatively short-lived khaki foam. The nose comprises coffee, light treacle, and a hint of graham cracker way in the back. The taste brings in more of the same, along with a clear vein of cola. The body is a light medium, with a moderate carbonation and a dry, crisp finish. Seriously,. everything falls off of an apparently tall and steep tabletop at the end, making me wonder whether or not I've even had anything in my mouth. Overall, this is an interesting beer that I can't pin down in my head. There isn't much wheat influence as I can tell, there's plenty of roast, and nothing stays long enough for me to get acquainted. I guess I could say I wouldn't mind having another, but I'm not likely to ever seek it out again.

A- The jet black body supports a pale tan cream that boils but last for a good bit.

S- The aroma of green bananas and green young wood grows as the beer opens. There is a mellow chocolate malt finish with a hint of coffee.

T- The mellow chocolate cream malt has a nougat finish with a touch of sweetness and a green banana character that lingers. As the beer warms there is a light tartness that comes through.

M- This beer has medium-light mouthfeel with a fizz that fills the tongue.

O- This has some nice unique chocolate wheat character but the green bananas and young wood are a bit odd, and start to dominate.

Baaaad Boy pours a black color with a very small head. There is a roasted aroma with hints of black licorice. The taste is slightly roasted, with hints of black licorice. Good flavors, and fully body flavors. Overall its a nice beer, however its a bit boring.

From a 355 ml bottle into a nonic at Smyth Restaurant in Milwaukee.

A-The brew is dark, dark brown with only a hint of light getting through. Not much head is seen, just a half-finger of short-lived brown foam that leaves no lacing.

S-As you might expect from the dark color, the smell is full of roasted flavors like char and chocolate. There is also some wheat and a wet grain smell that is strangely off-putting but inviting at the same time.

T-The taste is packe with more roasted flavors that border on acrid and would pass for a porter in many circles. Char, smoke, and dark chocolate malts play against the aforementioned wet grain taste. You know you're drinking a wheat beer, but the stout-like darkness keeps suggesting otherwise. The result is complex and strangely compelling.

M-The brew is moderate to light weight with lighter levels of carb.

O-This is a pretty unique beer with way more flavors going on than I would have expected. The charred flavors are a bit too a acrid and the feel was a bit of a letdown, but this brew was a nice departure from the standard IPA or my recent hefe obsession.

Appearance: Poured into a 300 ml weizen glass. The color, as promised by the beer’s webpage, truly is darker than some porters: it looks black but may be very deep brown. When held to a lamp (I have never done that with a wheat beer!) it becomes a dark cherry color. Two fingers of tan, buttery head dissipated fairly quickly, leaving a bubbly skim and ring around the edge.

Smell: The aroma is very smooth and reminiscent of oatmeal stout. It offers a pleasant blend of dark chocolate, roasted malts, oat-like grain (probably wheat — duh!), a little molasses, and black raspberry.

Taste: The mouthfeel is not as creamy as oatmeal stout, but it does offer much of the same flavor. The roasted bitterness is kept at a minimum until the aftertaste, when it lingers on the taste buds. Dark chocolate, wheat, maybe some caramel or toffee, and a hint of black and cherry licorice.

Drinkability: This is good stuff and I bet it is superb on tap. I think I have a reason to visit Sheboygan now.

Pours a HUGE, dense, tan head that is surprisingly persistent. Aroma is acid, toasted malt. It smells exactly like a porter or stout would. Black. Starts with a nice, deep, toasted malt flavor, a touch of metallic twang. Builds into a very coffee like acidity as the hops blend with the toasted malt. The finish is lingering coffee.

This pretty much drinks like a stout, I'm not sure how the wheat plays into this.
It's quite good, though.

Poured 12 oz bottle into a snifter.

A - Dark coffee brown/black. Small 1 finger light tan head. Slight ring remains. Lacing, where?

S - Wheat and roasted malt. Some hints of chocolate and a bit of earthiness.

T - Wheat and roasted malt with hints of sweet caramel and chocolate. Not too much going on, but it is tasty.

M - On the light side with minimal carbonation. I expected a creamier and smoothness to it.

O - It is a dark sessionable ale that has similar, but lacks, qualities of Sprecher's Black Bavarian.

3 Sheeps Baaad Boy

Poured from a 12 oz bottle into a shaker pint. Served chilled.

A) A very dark brown, with about a finger of light tan head. The head settled to a wispy dusting. A bit of lacing too.

S) Quite a bit of dark roast. It's a bit charred. Light hop bitterness. A hint of dark chocolate as it warms. I didn't pick up much wheat.

T) Plenty of roast and some chocolate characteristics. A bit of wheat in the flavor. Finishes roasty...

M) Pretty light, with a fair amount of sizzle. Not as smooth as advertised. Lingering aftertaste...

O) Not bad, but of the 3 sheeps offerings I've tried, this is my least favorite. I definitely would not go out of my way for it, but that's just like my opinion man... Far out...

A - Deeper brown with lighter brown highlights and a thin tan head.

S - Lightly roasted malt, multigrain bread, light hints of chocolate and coffee.

T - Multigrain bread and lightly toasted bread followed by light coffee and chocolate notes. Slightly yeasty in the finish.

M - On the light side but it plays well with the roasty/toasty notes. Good carbonation.

D - Nicely balanced and easy drinking.

12 oz bottle poured into a Bruery tulip.
5.5% ABV, 13 IBUs

(Bottles are pending label approval and are expected to hit market early-to-mid fall.)

A - Baaad Boy pours a clear rich mahogany color that is near pitch black in the tulip; Baaad Boy is the black sheep of the bunch! The beer is topped by a light sandy Sahara foam that dots the glass in specks of lace and rests on the black brew with a loose collar.

S - Roasted malt opens with a strong coffee aroma followed by dark chocolate bunny ears. Hints of ash tray-like smokiness linger in the air of this roasted-yet-delicate beer. Nothing else really comes through, but it's got an inviting nose of maltiness.

T - Soft wheat is all but overpowered in this roasty American Dark Wheat Ale. Plenty of chocolate and coffee comes fourth without being too porter-like but it still seems to completely control the flavor with little interaction from other aspects. Faint yeast earthiness reminds of the clay attributes found in 3 Sheeps Cirque du Wit but this is as far as the depth goes.

M - The roasted quality, while tasting delicious, takes over a bit too much in flavor. The mouthfeel, however, shines wonderfully as the wheat softens - takes the edge off the roast nicely. Very little bitterness comes through, but the roast also finishes out dry for a clean, crisp-like swallow which immediately has you tilting the pint back for another sip.

O - Baaad Boy's bold aroma suggests, a little more delicately and balanced, the amount of roast malt used in it's process but the flavor doesn't incorporate the same level of balance. Remaining medium-bodied and lower in alcohol content, Baaad Boy offers a dark-tasting beer without the filling feeling a heavier stout might produce. A fine start at a dark beer for 3 Sheeps!

Cheap growler fill from Timer's in Racine.

Poured into a pair of tulip glasses. it has a rusty copper orange with a light haze. Initial finger of white foam that settles quickly to a wispy skim and ring of bubbles around the edges.

Yeasty, earthy aroma, multigrain bread. Something a bit musty and funky fermentation wise, seems young.

Bready multigrain flavors, light buttered biscuit, yeast. Fairly simple and straightforward. Some light astringency, lightly bitter and sweet, bready and malt forward. A bit watery but drinkable. Overall pretty simple and seems like it could use a bit more hop or fruity yeast esters to give it some dimension.

Paired with cured smoked pork shoulder, wild boar sausage, and prosciutto charcuterie. The sweetness of the beer became more apparent when up against the salty cured meats.
