Poured from the bottle into a tulip glass. 9 Months in Cabernet Wine barrels. Vintage 2015, July 17th.

Classic Belgian looking character, deep bronzed shiny orange body color, with very excellent clarity to see the carbonation. Reams and reams of side pinehead white linear streaming carbonation and a good solid roaring column in the middle. Creamy white bowled top of a head, minor retention, and always being repopulated a real winner in the looks department.

Must heat of brett with a good funky quality. Excellent juiced fruit notes but slight comes out with a bit of grape Kool aid like sweetness just by a hair. There's maybe a touch of biscuit cookie like malt quality as well, but definitely yeast punch forward.

Palate hits solidly with excellent mouthfeel. Juiced and full bodied flavor all over the palate. Fruity notes of mild stone fruit but also some creamy tones mixing in with sharp bretty and dryness. Cake like vanilla aftertaste with a real excellent malt sweetness. Fruit angle drops the kool aid for an almost peaches and cream like robust quality. Dryness and earthy saison flavors take a somewhat backseat to malt and vanilla sugar like tones. Angel cake like flavors.

A real excellent barrel aged saison like brew.

Poured gently at 47°F from a 500ml bottle (bottled on 17Jul15) into a tulip. Consumed on 20Apr16.
LOOK: Pours with a fingers worth of white foam that recedes into a quarter fingers worth within 35 seconds. Gold in color with a high amount of cloudiness. There is a plethora of small, rising bubbles. Lacing is moderate in quantity and thick.
SMELL: Strong aromas of hay are backed by mild aromas of sour green apple, peppery red wine, oak, earthy yeast, and tobacco along with subtle aromas of sweet peaches.
TASTE: To my complete surprise, strong peppery red wine flavors first stike the palate. They are unbalanced and unmet by any flavors at first sip, and are quite unsettling if you aren't a red wine person. Thankfully, balance is achieved when mild hay and sour green apple flavors immediately trail. Mild tobacco and subtle oak continue to add balance, even though the red wine flavors grow slightly stronger. Subtle sweet peach and earthy yeast flavors finish off the taste theatrical as all previous flavors persist.
FEEL: Medium-bodied with moderate amounts of carbonation. This goes down somewhat smooth. Finishes with a strong and unpleasant dryness.
NOTE: These guys know how to make a sour. Even better, they know how to make a fruited sour based on my experience from their Apricot Récolte du Bois. However, based on this, their wine barrel-aging could use some work. Don't get me wrong, this was a great brew. But instead of the wine flavors playing along with the others, they bullied their way to maintain control of the palate. I highly recommend to any red wine lovers. If you aren't of that sort, I would avoid this.

this has spent 9 months in cabernet barrels, and this wines influence on the base beer is profound, as wine forward as almost any beer i can remember. its got that tannic acidic sting to the nose, seemingly much more sour than the peach edition, but without losing the bretty funk that makes it special in the first place. the beer looks a little more clear than the other one i had too, more yellow and brighter, with aybe the slightest pink hint to it if i force it. the wine has so much aroma and flavor to it, its really insane. its sharply acidic on the front end, i even get that sulfate mouthfeel, but it also has soft plums and dried cherries and rubbed leather going on, and seems almost over flavored for such a light beer. this is definitely something unique and special, and should assuredly get some popularity going if it gets into many hands. incredibly impressive use of the barrel, and the base beer is perfect for it. more please!
