I was digging around the back of the fridge and came across two bottles of this fabulous find. Forgot they were there for quite some time. Does beer improve with age in a fridge? I do not remember it being this good before. The malt had an hint of chocolate flavor, and the feel was creamy almost like an oatmeal stout. The hops were not overwhelming citrus up front and left a nice finish which was superb leaving you wanting another sip. To be honest I had just polished off some schnitzel I made with a little habanero powder, lots of dill and some Mrs. Dash table blend added to the bread crumbs cooked in Olive oil. Did the habanero open up my taste buds or did this beer just get better. Schnitzel and beer is always a good thing especially with Spotlight IPA.

L: Pours brilliant copper amber under a 3” light cream colored foam cap that takes 4 minutes to reduce to ¼ its original size. Very clingy and lacy.

S: A trace of anise, mint, some bread crumb, medium hop aromas, medium low malt aromas.

T: Fruit, tropical fruit, medium high bitterness, slight herbal astringency, drying on the finish, sturdy malt in the background. Medium hop flavor and medium malt flavor.

F: Creamy, medium body, medium low carbonation, lightly astringent.

O: A full flavored, nicely balanced IPA.

12 oz bottle. Pours amber with some haziness, thick off white head with nice retention. A few rings of lace. Aroma is all sweet caramel and bready. The taste follows, malt forward, sticky sweet. The hops come in mid-sip with some strong pine and grapefruit peel, fresh cut grass, but in the end the malty sweetness wins over. Medium mouthfeel. Overall malt forward ipa, like a hoppy red ale, decent brew.

Not much aroma for an IPA. Rye gives it a nice malt forward kick. Well balanced.

Beer Safari in M/SP. Had on tap at Happy Gnome. Stunning pour in the glass. Just beautiful but actual drinking experience was just good. Good brew and nice taste.Wouldn't turn this down, but way too many better brews to go to next before coming around to Spotlight again.

Served on tap into an English pub glass. The beer has an excellent dark red/light brown color and is translucent. The look is absolutely amazing. The head is an off white color and retains well. Perfect level of carbonation.

The flavor isn't anything special compared to some other craft brews, but it's better than most Third Street beers I've had before. Even though it isn't very different from a lot if other IPAs, it still tastes great. However, there isn't anything special about the aroma. The beer also has a very nice, full feeling and is very smooth. If nobody told you, you would have no idea that the beer is 7.3% ABV.

This is an great beer and the only thing preventing me from giving it a higher score is the lack of a distinct taste compared to some other IPAs. That said, Third Street tends to be a bit cheaper, so this might become my go-to IPA when I don't want to try a new one.

This beer is definitely worth trying at least once.
