Our take on what was called the “Party Gyle” system, a way to make different strength beers using the same mash. The grain would be mashed multiple times, and the extract would be used to make a different beer each time.
In our version, we “mashed” once but separated the wort to make 2 different beers: the first runnings made The Newburgh Conspiracy… and the 2nd runnings resulted in Chile Lime Stout.
Chile Lime Stout is not just a clever name. It was brewed with chiles… and yes, limes. On first glance it looks as dark and big as The Newburgh Conspiracy, but it’s a far lighter and more sessionable ale. You’re greeted with the rich aroma of lime, and the finish is a lingering heat that becomes more and more refreshing with each sip.

Appearance: Not quite black, but close, with an impressive head that leaves plenty of lace
Smell: Chile and lime elements dominate the aroma
Taste: As with the aroma, the chile and lime hits the palate with a one-two punch, building the heat through mid-palate; a little bit of roast appears to complement the hot and tart flavors though it gets lost in the shuffle
Mouthfeel: Medium body with moderate carbonation
Overall: The chile and lime elements are dominant, leaving me to wonder what happened to the stout

This is among the most unique beers I've ever had. Tried a pint on tap at the brewery.
This is one of those beers that most people will either love or hate. It's very different even from some that are similar in name.
It's a dark stout, though not as thick as they tend to be. The lime adds a prominent acidic bite, and there is a subtle but very present peppery afterburn that will stay there for a few seconds. They work well together. The nose is similar. This isn't a typical stout by any stretch of the imagination.
I personally found this beer to be delicious and brilliant, and a very successful implementation of "zingy/zesty" beer. I've not tried many like it, but this to me strikes a good balance.
I should reiterate that this one is not for everyone (as demonstrated when I offered a couple of friends a taste.) If you don't like spicy/citrusy things in general, you may want to avoid this one. I, however, found this to be a delicious and innovative brew. I can't wait to bring home a growler for nacho night.
