This amazing beer was created the day we commemorated the 7th anniversary of the Brasserie des Franches-Montagnes. The opening days, held every year on the first Saturday of November, are the opportunity for the brewer to devise a new recipe.
This one-off impressed B. United International Inc.'s boss so much that he asked for it to be brewed again just for you lot across the Pond. It is brewed using a combination of 6 aroma hop varieties, which give it a moderate bitterness and a complex bouquet evolving over time. Yes, because Cuvee Du 7eme will improve over time, you should stash it away in a cellar.

Sampled 8-1-2007. I have actually had this beer several times prior to now. Somehow I never took the time to review it. I guess I was too busy enjoying it at Spuyten Duyvil to care about reviews.

Pours a dark brownish with orange tint and it is completely clouded. Nice crème head. Spices are on the nose as in an airy light orange citrus. Flavor is a thick mix of spices. That is the astounding theme here. Spices and a bit of funk. I feel like just biting into a thick bloody steak as I drink this. Feel has an attacking carbonation that is firm on the tongue. Liquid is pretty well bodied too. I say this is very drinkable, though the mass of spices assaulting the palate will definitely turn some people off. But hey, I like it. Enough to have had it a third time already.

I bought a big bag of beers at Eagle Provisions today and I noticed there was a little leakage which came from this bottle with the Grolsch style cap. So i wasn't planning on drinking tonight but I figured I should have this in case it was going to go bad. It opened with a thunderous pop though so my fears were probably unjustified. Oh well time to have my first Swiss beer.

A-Pale cloudy brown with a thick cream coloured fluffy dense three fingered head. Settles down into a nice one finger cap and leaves sheets of lace.

S-Spices and more spices. Also very yeasty and slightly sweet from the caramelised malt. The spices I am getting are cinnamon, maybe a twinge of black pepper and some cardamom.

T-Not as sweet as I was expecting. There is a minorsweet caramel start followed up by a deep bitterness that complements it well. The follow through reveals some raw alcohol notes which turn me off a bit. Still this is very interesting as there are a good deal of spice notes throughout and a bit of black pepper in the aftertaste.

M-Lighter than I would have thought with a effervescent champagne like carbonation.

D-Very interesting brew but the alcohol burn in the end at the back of the throat is a little much for me. An interesting choice though and in no way a bad beer, but not one I will go out of my way to get again.

Pours a very hazy dark muddy brown with a full four fingers worth of head that fades slowly to a thin soapy cap. The subsequent lacing is a bit tattered and broken.

Smell; very yeasty, almost dusty aroma, with some dark fruits and sweet malts mixed in. Surprisingly, there’s a little little bit of a floral hop aroma, with just some touches of citrus as well.

Taste; the yeast isn’t quite so strong as it was in the aroma, but still very evident. Dark fruits and sweet malts fill out the middle of theis beers, and then some floral hops come out. There also seems to be a bit of a smokiness to this as well.

Mouthfeel is medium bodied, and maybe a touch on the syrupy side, with a pretty good drinkability. Not really a beer I’d like to drik all of the time, but certainly a nice change of pace time of beer.

Although BFM markets the 6 types of hops, the bitterness is well contained, and most substantiated in the finish. Superior tasty Belgian dark, with herbal aroma. Some caramel, grassiness, bold taste for merely 7.5% (and great for a weekencd lunch), orange peel citrus, coriander,fruity,sweet spicey yeasty.

Appearance – An amber color hue with a HUGE foamy white head. very appealing looking.

Smell – Notes of flowery hops, yeast, some oranges rind, lemon, and lavender.

Taste – Very clean. The yeast and different hops mingle with some sweet malt. Very complex for the few ingredients.

Mouthfeel – Sweet and sticky mouthfeel. The carbonation is very active.

Drinkability – I am glad I got to try this. I would definitely pick up some more if I could.

Explodes out of bottle making a five-finger+ white rocky head that goes quickly leaving some lace. Cloudy amber color. Ton of yeast. Light-medium carbonation and medium bodied. Malty, yeasty nose. Flavor is sweet and spicy some raisin, clean finish. $5.99 for a 330ml bottle from Tully's Beer & Wine Wells, Me.

This beer foamed out of the bottle like a volcano and kept foaming out of the bottle even after I'd poured two chalices. Unbelievable! The foamiest beer I've ever had. The aroma is lightly spicy and toasty with cinammon, clove, apricot, and a tannic finish. The flavor is even spicier, and is similar to the aroma. There is also a woodiness to the beer that balances the spiciness. Very dry and tannic, not very creamy, but not rough either. There is a bitter herbalness to this beer as well, but it tastes more like sage than hops. Very interesting. Pretty drinkable, a little intense to have much, but interesting enough to keep quaffing. Very nice to see this beer available in the states.I'll definitely be trying some more of their offerings.

Pop! The bottle opened, cold gases streamed out, condensing water vapor, and a mini-volcano of foam commenced. After it was contained and poured into a snifter, I had to sit back and gape at the head. Massive. The beer itself was a beautiful color, a cloudy orange, and the head stuck nicely to the glass.

I wish I'd read the reviews on this one before trying it (or tried to convert the label's suggestion for serving at 10 to 12 degrees C to Farenheit) -- I had it fairly cold, which may have hurt my impressions of it. Overall, I was unimpressed -- it had all the elements of Belgian styles -- fruity yeast, spices, dark fruit -- but they were dominated by the booziness. I didn't even finish my glass. I wonder if 5 degrees C would have made all the difference.

Cuvée Du 7ème - Product of Switzerland.
750 ml bottle

I shared this beer with BA bookert at Sunday evening meal when his family joined mine for dinner. Great evening great beer.

Allowed to warm while we ate. And served after the meal.

Appearance: Poured a murky copper brown color with a big head and notable lacing in my snifter glass.

Smell: Delightful aroma of yeast and spices. Sugary sweet with apples and raisins and a hint of plum and some farmhouse attributes.

Taste: Initially I found this to more pale ale ten strong dark. Our first pours did not include the yeasties and we re-corked the bottle and set it aside. My first thoughts were very sharply sugar with cinnamon and Belgian yeast a hint of apple. I returned to this bottle at the end of the evening after everyone else went to bed it still had the wine cork it ant a glass left. This one I enjoyed even more at room temperature and including the 'bottom of the barrel'. More plum raisin and molasses along with the cinnamon and cardamom. A bit of alcohol on the cheeks forces a slight pucker on the swallow.

Mouthfeel: Spicy and active and a bit gritty on the palate. Spices and alcohol and sharp sweetness and dryness in the finish tug and pull on the palate keeping you very busy.

Drinkability: This is not a very drinkable beer although it is enjoyable. Two of us left a glass in the 750. It is a beer that demands a lot, but is pleasant; I certainly don't need more than one though.

using 6 sorts of hops added at different times; this is a new version for USA export - cloudy reddish-brown colour with a giant beige foam; complex hoppy nose where flowery and fruity notes are meeting together wih a cookie chocolaty maltiness; creamy mouthfeel and with a strong malt body; robust astringeant bitterness and a long bitter hoppy and a little bit earthy finish - a definitely cleaner, more balanced version (lucky americans !:-))

Poured a medium reddish-brown color with massive slightly off white puffy head.
Smell is an enjoyable combination of light spices and some dark fruits.
Taste is dominated by a dark fruitiness combinted with some hops that presented an enticing mixture.
Finished with more dark fruit and a bit of alcohol also noted.
An OK beer, but nothing outstanding.

Pours a dusky, dingy orange amber. The head on this beer is massive to the point of being a PITA, and it sticks around forever. Soft, yeasty, spicy aroma that only really comes out at higher temperatures (contrary to the temperature serving instructions on the bottle). Also emerging at warmer temperatures are some smooth candi sugar notes. As for the taste, it's very tight at colder temperatures. It's initially sharp with hops before shifting into spice mode, but it's thin when cool. At room temperature, everything gets richer and much more in line with what I'd expect from a Beglian strong dark ale. Mouthfeel at room temp is on the heavy, sticky side of things for a beer, but light for a Belgian dark.

I can't stress enough that this is a beer that benefits from drinking at room temperature. At the lower temperatures I was very disappointed in this one, mostly due to the quality of other beers from this brewery and what this one costs. But at higher temperatures it's a very high quality beer. Probably still not worth the cost, but very good.

I had very high hopes for this beer as it cost me $6.99 from BierKraft in Brooklyn. As suggested on the label, I let it warm to just below cellar temperature (50º-53ºF) before tasting it.

It opened with a 'crack', and was a bit hard to pour as even the initial liquid foamed up immensely (not that hasn't happened to me with some of my favorite Belgian beers), but once that settled a bit I was able to fill the goblet. It delivered a cloudy deep-chestnut colored body beneath a thick-thumb of frothy yellowed-antique-white. Over time the head died down, but a continual creamy covering was maintained, and it left walls of thick and creamy lace about the glass. Nice!

The nose was yeasty and spicy. The label reads that it's made with 6 aroma hops, but I didn't really get a whole lot of hops at all - what was there was floral and spicy (although the spice may have been from the yeast).

Although it had a massive carbonation to begin with, most of that was released during the pour, and it was gently effervescent with a tingle on the tongue and a smooth, medium-light body.

The flavor was very much as the nose indicated, with spice and yeast (that's both "yeast", and yeasty fruitiness) over a lightly sweet, subtly candyish, mildly chocolate-tinged malt, and an alcohol-soaked raisin side. The bitterness was brisk and solid underneath, and it finished dry with a wash of alcohol and some lingering spice (seems almost like dull nutmeg and all-spice, but it's probably clove).

Overall, I found it to be poorly made, with characteristics of a high fermentation temperature; and a general lack of interesting character, and by that I mean that it lacked flavor - it certainly has a large amount of flavor - it doesn't seem to have any real depth or complexity. Maybe I had a bad bottle. Maybe it was poorly stored. But as a professional brewer for over a decade, I think I can see through that... this is just not focused enough.

750 ml bottle. 375 ml sample. The beer pours a nice very deep tea color with a 3 finger head that falls to atwo finger mountain of head over the brew. It is exceptionally cloudy, and there is a moderate carbonation working up to the surface. Good looking brew here. The nose reminds me a lot of a bier de garde. Lots of musty and earthy notes overlaying a raisiney fruitynes and a nice spiceyness that really adds a nice complexity to it. The flavor is interesting, with a big dank basement/musty character that overlays a mild raisin character. It finishes with a moderate hop bitterness that plays on into the finish pretty well. It is interesting. The bottle calls it a Rousse de Garde, which leads me to the conclusion that this one is supposed to be a bier de garde style beer. It has such a prevalent musty character that I can't come to any other conclusion. The feel is a solid moderate with a very strong carbonation that adds a nice livelyness to this one. I think this is a nice beer. I like the big musty and earthy notes, and how the mild raisin character balances with it. The hop character is a little unexpected in the brew, but I think it adds a nice level of complexity. Not bad at all.

According to the ingredients on the label, Cuvée du 7ème includes water, malt, a combination of 6 aroma hops, sugar, yeast.

Cloudy rubied amber. Tall, towering head of medium sized almond colored bubbles that settles slowly, but steadily. The solid core of focused carbonation streams send a plethora of bubbles to the surface. A mesa of creamy foam remains surrounded by a few bands of thick lace. Dark fruit and sweet/spicy aromas meld with candied nuts as well as a bit of Belgian-esque yeastiness. An interesting mix of candy sweet and dark fruit spicy aromas. The flavor is all over the place, currants and sugary sweetness bounce off peppery hop spice notes. The alcohol stands out a bit and adds some warming heat through the middle and into the finish. Dark fruit notes arrive as well, plums perhaps, but they are successfully juxtaposed against the intricate hop palate. There is a caramel bit as well as an almost woody-crispness. The back corners of the mouth are left tingling. As with La Meule, the spiciness builds over the course of the bottle, layering complexities. Medium body with fine carbonation and a bit dry. The alcohol lends warmth while the tongue tingles. Interesting and enjoyable and worth seeking out.

This is a 330 mL flip top bottle.

A: The ale is dark in color with a thick ring of head that twice overflowed.

S: The ale has a musky yeast aroma that implies a good bit of strength in the ale.

T: The ale has a strong alcohol flavor that is underscored by alefruits, some figs and dates primarily.

M: The mouthfeel is a little rough, as the yeast and the alcohol give the beer a strong flavor.

D: Not a bad beer but nowhere near the best in the nebulous style.

Appearance: 2006 version. Pours a hazy copper orange color with a fluffy 3" head that lasts a long time. Nice lacing develops during the session.

Smell: big fruity nose with some yeast tones.

Taste: caramel, yeast, ripe red fruits, pepper spice, hearty bitterness, and a hint of alcohol. Full flavored beer here.

Mouthfeel: prickly crispness at the start while the finish is crisp and dry.The flavors linger briefly on the tongue after swallowing. Medium bodied beer.

Drinkability: easy to quaff for the style. Beer was expensive at $14.99 for a bomber bottle, so multi-bottle purchases seem unlikely. Was it worth $14.99 ? That's up for debate, but the beer is very tasty.

Appears an orange amber with a fluffy light tan head. Tons of scattered lacing is left around the glass.
Smell is of a decent hop presence that is sweet, along with a malt presence that contains notes of herbs, citrus, vanilla cream, and mild toasted nuts.
Taste is of the same aromas with the same sugary blend that seems to fit together in an interesting mix.
Mouthfeel is sweet up front and fading to the back of the tongue in a medium bodied brew.

Big 750 ml bottle, dated 2006...

Hazy ginger brown color with a reddish cast, giant head of over an inch. Laces are thin, spidery, and complete. Whew, sharp aroma, almost like onion juice over very aged cheddar. Mouthfeel is on the light side (the last pour from the big bottle is plenty thick and sedimented), carbonation is well-spaced and subdued. The taste is very unusual with a lot of complexities, perhaps this alone makes this fairly expensive brew worth the price. Malty syrupy underpinnings, almost molasses in tone with a tangy yeast and dry hoppiness. All along, there's a distinct medicinal quality, minty in a wintergreen manner, spicy with clove and mace, and an overlay of strong ginger. Pretty interesting product here, nice to try something very different and somewhat challenging.

The beer poured into the chalice amber brown but straight up dark amber when held to light. The head was off-white, slow forming and grew well in a tight and moussy formation that laced the glass.

The aroma was earthy with a farmhouse character and a light spice. Dark fruits, namely raisins, were present. Also a nice dark caramel aromatic was prominent and a very slight oud bruin tartness with cherry esters.

The flavor was much different than expected. The beer was well bittered and had many flavor characteristics found in many of the Saison's found today. The flavor had a light Brett character, nothing powerful, but enough to be present. The dark fruits were lightly present but trounced by hop character and flavor which were earthy and well done with an excellent complexity. Peppery spice was present and was interesting. Just a very light tartness was begining to develop in the flavor and only served to add more complexity to the party.

The finish was dry with a lasting peppery spice and dry dark fruit character into the aftertaste and bittering lasing well beyond that. The body was medium and the mouthfeel was creamy. Some warming from alcohol was present after consumption but alcohol did not play any particular role in the aroma or flavor. A wonderful beer, it's dark but has more in common with a Saison than a Belgian Strong Dark.

Sampled at the Monk's Cafe BFM tasting the other night. Beer was served from a 11.15 oz bottle with a swing top. The beer poured a amber color that was a bit hazy and had a nice crisp off white head. The aroma of the beer game me some citrus hints and other fruit tones combined with an earthy character. The taste was a suble mix of hop bitterness and malty sweetness. There were also notes of the yeast coming through and making this a very pleasant beer. This was the first BFM beer I tried that night and it was one of the last ones also as we came back to it after trying the other 6 that were available.

from the bottle no date that I could find. poured a cloudy amber with a big bubbly light tan head. aroma the first thing that hits the nose is a light metallic followed by grapefruit, malts, amd yeast and fruits. flavor, orange, hazelnut, hoppy, sweet malts, with a bit of alcohol at the finish. this isn’t like any IPA I have had before good beer

Appearance – Picked up at Stateline under the guise of trying something that I had never heard of. The 330 ml swing-top bottle opens with a resounding POP and a small overflow of foam. In my wineglass the beer is a clear amber-red with a big creamy off-white head that lasts until the last for the entire drink.

Smell – Slight alcohol with the perfume of flowers, lavender and citrus. No spices listed on the label, just malt, sugar, yeast and 6 hops. The malt contribution is clean and light and the hops add a subtle spiciness and maybe some of the floral character. Superb complexity from a beer without spices.

Taste – Smooth with lots of yeast and hop complexity. Solid bitterness is balanced out by some sticky sweet toasted malt. A perfect blend of yeast and hops to give the illusion of elaborate spicing, I just wish I knew their secret formula. The beer is in remarkable shape for an import, really fresh and clean.

Mouthfeel – A bit thicker than a standard Belgian style beer, but the sharp carbonation cuts through it keeping the beer from being cloying.

Drinkability & Notes – The great flavor really makes this one easy to drink, it would be a 5 if it were just a bit lighter in the mouth. A single batch for BFM's 7th anniversary beer, very happy I got the chance to try it. Hopefully we'll start seeing a lot more of BFM soon.
