Notes/Commercial Description:
Sahalie is the flagship brand of The Ale Apothecary, brewed year-round of malted barley & wheat and Goschie Farms Cascade Hops. Hop bitterness and acid produced by our house lactobacillus culture provide the balance to the malt and oak structure of the beer. She spends up to 1 year in our oak barrels during a long, relaxed fermentation prior to a month-long dry-hopping (yes, in oak barrels!). 
Our sensory experience is a tropical & citrus fruit nose of apricots, pineapple, and orange produced from yeast esters and hop oils. The palate is tart and pithy, combining earthy and herbal undertones that evolve as the beer warms & opens up within your glass.

Pretty strong tasting notes - I really enjoyed the effects of the dry hopping which seemed to interplay very nicely with the soapy and pungent bacteria that harvested in this barrel. Very impressive stuff.

750 mL bottle poured into a snifter. Reviewed from notes.

Appearance - Light golden yellow. Very hazy. Nice white head.

Smell - Lots of white wine, funk, and oak. Mild acidity. Grainy malt aroma with some lemon and citrus.

Taste - White wine flavors prominent again. Much more sour than the nose implied. Lemon, lactic sourness. The sweetness from pale malt builds and covers the sourness. Herbal flavors linger in the finish.

Mouthfeel - Medium carbonation. Sweet and sour in the same sip. Medium heavy body.

Overall - I had to have this (and all Ale Apothecary beers) a few times to really appreciate it. They are all very complex beers that don't fit into standard molds.
