another lightly infected bottle from paradox, but this one kind of works. from what i understand this is the same sour mash as a whiskey, but just fermented instead of distilled, a genius idea but one not particularly well executed, or perhaps contaminated by the extra step of aging in a bourbon barrel. there are huge white chunks of yeast the size of tic tacs on top, with not much head on a dark copper colored beer with some cloudiness. i smell rye for sure, and maybe some cornmeal or something sweet and granular. bourbon barrel has left a lot on this, sweet and boozy. the infection unfortunately makes acid the first thing you taste, unflattering to an otherwise very interesting brew. it gets tannic and funky prematurely, but still has a great full body layered with grain nuance and oaky bourbon flavors. this beer and this idea has a lot more untapped potential, but i wish paradox would figure out their issues. brown sugar residuals on the finish, more than i can handle with the booze, as well hidden as it is. passable, but barley. id like to see this redone with a little more care, it could be special.

Thanks to jmgrub for sharing this one at his tasting.

Bottle # 182/1200.

Pours a murky orange-brown with a foamy bone head that settles to wisps of film on top of the beer. Small dots of lace form around the glass on the drink down. Smell is sour with malt, bourbon, fruit, and acidic aromas. Taste is much the same with slightly sour malt and bourbon flavors on the finish. There is a mild amount of woody bitterness on the palate with each sip. This beer has a lower level of carbonation with a slightly crisp and medium bodied mouthfeel. Overall, this is a pretty good beer with more of a sour presence in the small over the taste.
