been awhile since i had a beer from these guys, and this one has been out in the market for what seems like ages now. thought it would be a good time to try one, see how their beer is ageing these days. sexy packaging with the silver wax! its a neat one, almost comes across as a flanders red, a deep sour almost brown colored brew, aged in red wine barrels, it has quite a lot going on, and most in our group loved it. there is a lot of pucker on the nose, a very mature bacterial sourness, with sharp lemon acidity and wood tannins along with it, less funk than expected for its age, but not sure it was every supposed to be bretty. notes of dried cherries, raisins, and cranberry greet me on the first sip, with a flanders-like vinegar sourness, tons of big red wine and wet oak. cherry in the flavor, tobacco, subtle brown sugar, earthy baked grains, and the tangy yeast side of things, which is more mature and complex here than in others, really brought out by the wine, this is layered and different, and could almost be european. it would be hard to drink a whole lot of it, the acidity is strong and it sits heavy, but its well carbonated and interesting to say the least. not sure how much this is likely to have evolved in the bottle since it was released (well over a year ago now, maybe two), but it seems finished, mature, and ready. one of the better sours from this era of paradox.

The look/pour of this is murky brown, almost sludgy. One of the prior reviews describing this as bile-like seems to be pretty accurate.

375ml bottle.
Pours dark amber with a short, beige head that retreats to a partial skim coat for the duration.
Aromatics lead off with dried figs, stomach acid, and soured fruit. Hints of leather, apple skins, and dusty bark.
Medium bodied with a mildly chewy mouthfeel.
Dark cherries run under ripe malt on the palate. A slight tartness steps forward with shades of yogurt-like lactic acid and mild funk.
Finishes with a balancing sweetness, souring fruit, and a slight warmth.
Another Paradox beer which falls short of greatness. This is very "balanced", barely tart, and on the timid side of funkytown. The bile-like acid is off-putting as well.

This is a very approachable barrel-aged wild ale. The flavors ease their way onto your palate and coat it with a well-balanced blend of fruitiness, tartness, and woody warmth. It's too bad the near-complete lack of carbonation leaves the appearance lacking in appeal, but from a taste and smell perspective, this is a fine, easy drinking wild ale and would be a nice intro to people who have yet to experience this style's potential.

Pours a murky reddish-brown with a foamy khaki head that settles to a partial film on top of the beer. Tiny dots of lace form around the glass on the drink down. Smell is slightly sour with fruit, earth, wood, and red wine aromas. Taste is much the same with slightly sour fruit, earth, red wine, and buttery wood flavors on the finish. There is a mild amount of wood bitterness on the palate with each sip. This beer has a lower level of carbonation with a slightly crisp and dry mouthfeel. Overall, this is a pretty good beer with solid red wine barrel aged qualities all around.
