This brew pours the color of burnt caramel. It holds a one finger head of massive creamy bubbles. It retains decently, leaving thick and covering lacing as it disappears. Haze is apparent, with no real sediment, and carbonation appears light to moderate. The aroma sings of chalky caramel malts and steely barley. There is a cutting sweetness of hops, which are mild but cleanly citric. Buttery diacetyls are slight, with a mild toast. With warmth comes bigger hops, but these are floral, giving suggestions of lavender. As we sip, the thick toast of caramel malts and booze hit up front. The middle continues in this vein with more toasty malts, but the hops come in for a nice balance. There are twangs of brass and coin, transitioning us to the finish. Here the booze seeps in to mix with our malts and hops, and a plastic, phenolic spiciness drains the last drops of liquid from the mouth. The aftertaste breathes with chalky malts, booze, honey spice, mustard seed, and dirty mineral rockiness. The body is medium and the carbonation is medijm. There is nice froth and slurp to each sip, with a spicy, almost puckering, bite to the finish. The mouth is left with a fine astringency. The abv is appropriate and the beer drinks easily.
Overall, what we enjoyed most about this brew was the toasty malts and the bittering from the hops. Most curiously we found the hops to be wonderfully floral, with what appeared to be a lavender streak. These, however, were underplayed, and left us wanting a more robust bite and hoppy spice from this DIPA.
