Little Lobster on the Prairie is a Farmhouse Saison that is lightly hopped with Galaxy hops and fermented with Brettanomyces Bruxellensis. This yeast brings notes of funky, musty, overripe fruits as well as light barnyard notes staying true to the farmhouse style. Refermented in the bottle with Blue Lobsters house yeast, this beer should be decanted and opened carefully as this beer is still developing in the bottle.

Pour is pale hazy golden yellow with a good amount of tight white head that lingers briefly. Nose is extremely dusty brett, hints of leather, and a light fruity lemon note perks in behind. Taste is much less dusty brett. The dustiness first up front, faint dry leather. Fruitiness is stronger in the flavor, some nice pineapple notes, lemon, a hint sugary. Light body, well carbonated, clean finish.

750ml bottle poured into a Duvel tulip.

A - Pours very pale golden in color, faint traces of haze, endless streams of effervescence rising throughout the glass. A thick cap of frothy white foam, 3 fingers high, slowly fades and falls with visible activity that provides entertainment while waiting for the chance to sample this beer.

S - Lots of fruity notes in the aroma - tart apples, pears, lemons, oranges. Candy-like in a Sweet-Tart way with acidic tartness. Nice funky notes - earthy and barnyardy. This is a really enticing aroma overall...

T - Acidic and tart up front with an assertive barnyardy funk. Citric acid tartness/bitter finish on every sip. Gingery - almost ginger ale like at times. Spicy hop bitterness at a medium/low level. Apples and lemon fruity and tart flavors. Plays more like a straight up wild ale than a saison, but this really isn't a complaint. Light, biscuity malt base...just barely there.

M - Thinnish mouthfeel - dry, tart and crisp. Pretty tart and sour overall, not really in a mouth puckering way, but more like a refreshing lemonade'y sort of tartness, although much drier. Plenty of yeasty funkiness that works very well here. Carbonation is high, very fizzy and a bit foamy in the mouth.

T - Very nice beer...more wild than saison, but saison is such a broad category it probably still does fit within it fine. Fruity, funky, tart and quite tasty. Hope to see this one again sometime.
