A good inch of tightly knit bright white foam. Hazy, light straw to golden colored ale with great carbonation and minimal Brussels lacing. I get pale malt,farmhouse yeast,pears and apricots. The taste is very sweet on the front of the palate with the farmhouse yeast and pale malt,but it seems aggressively tart with apricot finish on the finish. The mouth is moderately carbonated and bone dry.

After winning over each and every taste bud by stepping out of their farmhouse comfort zone with an Olde Ale here and an Imperial Stout there, Prairie gets back to their roots with this highly characterful Belgian Saison with full-on fruit and spice interplay.

Eliza5beth stands tall with a hazy yet bright goldenrod body and a creamy white head to float the glass. Quite yeasty in its appearance, the ale retains the session confidently and laces the glass with broken collars all the while.

A mix of musty citrus and plump tropical fruits gather in the nose for a fully fruity scent. Old, dried and fragrant woods follow suit with sandalwood, hay and a notion of lemony sassafras. Mixed with a peppery tinge, the nose is mildly wine-like.

To taste, its light bready taste offers up its starchy sweetness. When fused with dried oranges, lemons, apples and limes take on a sweet and tart flavor. Its musty character gives rise to light attic-like woods and damp hay. Earhty in its taste, wine-soaked wood gives the ale a funky-fresh flavor. A finish of white pepper and mild peat continue its earthen but fruity taste even in bitterness.

Medium-light in body, the beer has a light and pleasant powdery mouthfeel that makes it effortless to drink. Its creamy carbonation promotes its dry texture deeper and deeper into the session, and as the earthy aromas and flavors abound. In closure, the ale seems to evaporate off the mouth like cotton candy. Light warmth and playful spices dry the palate with ease.

Eliza5beth is a quintessential taste from Prairie. Without any gimmicks or distractions, this farmhouse ale does what Prairie does best!

In a snifter the beer was a yellow gold color, very clear. There was a small white head.

Earthy hop aroma. Fruit, some citrus. Spicy. Great aroma.

Lemon taste, some other fruit that was sweet. Peppery spice. Funky.

Crisp and tart. A fun beer to drink, but then again I'm very partial to Prairie.

500 mL bottle poured into a snifter. Thankful to find this 500 mL bottle instead of having to open a 3L.

Appearance - Pale, yellow, and a little hazy. Nice white head. Thick white collar.

Smell - Fruity and acidic smelling. Stone fruit, but not what I'd peg as apricot. Lemony element, too. Pale malt. Some grassy notes.

Taste - Much grainier. More of an emphasis on herbal and grassy flavors. Light lactic tartness. Faint fruitiness, but nothing like the aroma.

Mouthfeel - Medium light. Well carbonated. Minimal tang.

Overall - After I finished writing the review, I decided I liked it a lot. Nitpicking the flavors didn't seem to help my impression of the beer.

short review here. 3 litre bottle poured into prarie teku. hazy light orange. very sour and fruity smell with some oak esscense. tasted just as it smelled, almost like a sour wild ale but not much apricot. mouthbody was fairly mild. overall another win from prarie and I wish it was in production
