Eliza5beth is a golden farmhouse ale aged on apricots to allow sourness and light fruit flavors to add complexity to the beer.

A: pours up a quickly receding three-finger eggshell colored head. The beer itself is a slightly hazy amber gold.
S: immediate aromas of apple cider vinegar and brettanomyces funk, some slight notes of honey and biscuit as well.
T: immediate tartness, not bracingly sour, but sour nonetheless. There is a definite astringency here with no sweetness to speak of. Still there is something of a honeyed bready quality, but not a sweet one. Notes of apple, pear and white wine, here.
M: bone dry and crisp, but with a bit of a silky residue.
O: This is hard for me to recommend, it’s fine, but full disclosure I don’t really care for Brett heavy Saisons. It’s fine, but it lacks the fruity bouquet that the best Brett beers have. Many people would probably enjoy this beer, though I can’t imagine anyone will love it, but it’s not for me.

Note sure of dating. Probably at least a few years old at this point. Poured into tulip

Golden hazy with never ending streaming carbonation Tight, fizzy, two-finger white foam head. Dissipates to loose rockiness then to a mini soap bubbles version.

Upfront barnyard yeast and citrus funk with a tingly sourness In the nose. Lemon peel and dried apricot stickiness

Citrus bitterness, mellow apricot, lemon and grapefruit accompanied by yeasty bread and biscuit. Grass, hay and fried morel mushrooms. Cherry gummy candy.

Tangy and fizzy on the palate, medium to full body, great carbonation and slightly drying. A bit sticky at the end.

Despite this probably being pretty old, it held up well and has a good saison profile while opting for some more sourness in the overall smell and taste. Well balanced and refreshing.

Rating from notes. Consumed April 2014. "A world class, funky-tart saison with a dry, lemony palate. Eminently drinkable and satisfying as hell, this is a must-try IMO."

I generally love Prairie Artisan Ales and really appreciate all the work they've been doing in OK. Taste like someone pissed in a sour.

A: Poured into a Duvel tulip to a golden yellow topped by a dense and slightly rocky white head which has good retention and decent lacing
S: Smells of barnyard funk with a little horseblanket and some fruity stone fruit notes tucked in the back with a little spice
T: Taste is slightly tart up front with some nice apricot notes, horseblanket and barnyard are out in force as well along with some nice spice, orchard fruit esters come in as well. Swallow is a little sharp with notes of lemongrass, more apricots and some lingering funk.
M: This beer is on the lighter side of things but it is not watery. Carbonation is effervescent and slightly prickly while the beer has a drying finish.
O: Overall this is a really nice beer. It doesn't color too far outside the lines and it has some nice flavors and complexity. This one is worth a try if you like the style and can find it.

Pours a hazy straw yellow. Thick head that lingers for ages. Yeast at the front of the nose and palate. One of the most unique mouthfeels of any beer I've ever had... A very effervescent, champagne like texture. Better when warm.

A 16.9 fl oz (500ml) bottle with a Julian bottled on date of 08515, meaning it was bottled on 26th March 2015. Perhaps opened a few months later than I would have preferred. Poured into a Cantillon ballon glass.

Appearance: It poured a hazy golden orange colour with a big foamy three finger white head that dissipates fairly quickly to an extremely thin cap while leaving nice lacing.

Aroma: Tart, funky, wet hay, lemon juice and apricot.

Taste: Tart, lightly sour, straw, lemon, orange and apricot with some peppery spiciness towards the end.

Mouthfeel: Crisp, medium bodied with high prickly carbonation.

Overall: Although I didn’t intend to hold on to this for so long, 18 months in the bottle and it still holds up pretty nicely. Good tart and fruity flavors along with great carbonation.

No label information. Eliza5Beth is brewed in the style of a farmhouse ale, available in 16.9oz. bottles and on limited draft.

Poured from a 16.9oz. bottle to a tulip glass.

(Appearance) Pours a crisp, foamy head of a soft white color over a densely hazy pale amber body with abundant carbonation and varied, cloudy sediment. Retention is average and there is no visible lacing. 3.75

(Smell) Pale and malted wheat body with a moderate residual sweetness, potent juicy apricot and peach fruit sugars and a soft acidity of lemon and faint citrus peel generates a delicate tanginess. Farmhouse impact creates soft compounds of pepper and hay for a subtle damp, earthy bite. All-around a very enjoyable farmhouse ale flavor with lots of fruit character and not an overly dry perception with substantial sweetness remaining. Potency is moderate. 4.25

(Taste) Clean pale and biscuit malt body with a soft sweetness and body is met with a gentle but bright tanginess of fermented apricot juice and a clean, peppery and softly funky yeast midsection. No strong hop character, a respectable lemony acidity and sourness to this one, and moderately dry with some residual sweetness still in there. Farmhouse qualities are evident, yet subtle, some hay and dampness is evident and welcome for further complexity. Finishes clean and moderately acidic. 4

(Mouthfeel) Texture is slick, softly creamy, clean, tangy, medium dry. Carbonation is full for the style, generating a medium frothiness and a very crisp finish. Body is medium+ for the style, medium overall. Balance is very slightly tangy, acidic and dry combined over sweet. Alcohol presence is low and there are no off characters. 4

(Overall) All-around a very enjoyable tart farmhouse ale with lots of solid fruit flavor coming from the apricot additions, not overly dry nor overly sour, very drinkable and refreshing. Prairie makes fairly solid American-made Saisons and Farmhouse ales, and this is another quality example- not legendary by any means, but solid all-around. I'd seek this out again at a reasonable price. 4.25

This is a good looking beer, hazy with a head that really sticks around. Aroma is peach and lemon with some barnyard funk to it, good but not exceptional. Taste is a little lackluster, middle of the road for the style. It's acidic and lemony, a little peach, but not particularly complex. Moderately carbonated, good mouthfeel. Overall it's not something I'll seek out again.
