Prairie Ale is our classic saison. We brew this beer with pilsner malt, wheat malt, flaked wheat, and cane sugar. A healthy dose of saaz hops are used to add a spicy element to the beer. Prairie Ale is fermented with a mix of ale yeast, wine yeast, and brettanomyces. Notes of black pepper and pineapple can be found in this beer.

Loud pop of the cork and quickly into a goblet pours a cloudy pale yellow ale with a mountain of dense, off-white head. A few cracks in the frothy armor begin in the middle and slowly work their way out toward the edges until there is nothing left except a white sheet around the glass.
Extremely pleasant to the nose with some tart light fruits up front, quickly followed some sour notes, phenols, spice and damp leaves.
Spicy up front with a near perfect amount of fruit (green apples, oranges, lemon) and brett funk which is countered by a dollop of grain and then a hit of hop bitterness. A little later some taffy sweetness is noticed, adding a very nice touch.
Perfectly dry going down with a lingering heat in the throat which seems a bit much for the ABV, but gives this one an edge that I find enjoyable. Medium bodied and fairly airy.
This beer provides the perfect companion to an unseasonably warm December day. And while homerism abounds with a lot of local beer reviews, a fact that is in no way exclusive to Oklahoma, I can unashamedly attest to the excellence of the Prairie Ale.

A white froth grows large and quick with staying power to match. Color is yellow-orange.
Smells of grain, lemon zest, various overripe fruits, yeast and bold pepper.
On the tongue big brett plays right into the hands of a melange of sour fruits (orange, grapefruit, pear) and spice. I'm reminded of Orval, but with a bit more kick.
The 8.2% alcohol is obvious. Mouth-feel is medium and dry. Also a bit crackery with soft edges.

On tap at Cardinal Pub & Bar, Stavanger. Hazy pale yellow colour, large white head. Distinct aroma of brettanomyces / farmhouse, wine yeast, lemons and green and black peppercorns. The flavour is medium dry, a slight acidity but not really sour, distinctly yeasty, with loads of green and black peppercorns. Not very bitter. Unusual and interesting, but maybe too yeasty?

Rating from notes. Consumed April 2014. "Lovely Belgian-style saison with a hint of funk that adds some nice complexity. A first rate farmhouse ale that I would happily buy again. Well done."

Poured a constantly carbonating clear gold body with a one-finger head that died quickly. I got minimal funk and yeast and instead the spices and minimal candi-sugar esque maltiness somehow came across as apple cider. A smooth, clean, light-bodied saison with a prickly carbonation, some acidic sharpness, touches of pepper and spice, all balanced with a light malty and fruity sweetness so the beer is not too sharp or funky.

This was poured into a tulip. The appearance was a healthy looking golden yellow to orange with a fair brown color in the center of the beer. The head was about a finger’s worth of soft white foaminess that dissipated gently to leave a gentle strings of lacing. The smell started off with a black pepper and light spicy connotation of the hop content. There’s a nice sweet grassy quality with a light lemongrass coming in. The taste was smooth and sweet with a decent light spiciness to enliven my taste buds. On the palate, this one sat about a light to medium on the body with a fairly decent sessionability about it. The carbonation was somewhat sharp but still a decent smoothness rolling around on my tongue. Overall, this was a very good offering from a pretty stellar company.
