Notes/Commercial Description:
Prairie Ale is our classic saison. We brew this beer with pilsner malt, wheat malt, flaked wheat, and cane sugar. A healthy dose of saaz hops are used to add a spicy element to the beer. Prairie Ale is fermented with a mix of ale yeast, wine yeast, and brettanomyces. Notes of black pepper and pineapple can be found in this beer.

Apricots, toilet funk. Grassy spices that linger in the finish. A bit soft in acidity, would've liked more. Leaves kind of a bittersweet taste which I'm not a fan of. Nice medium-body mouthfeel with high carbonation. Overall, not bad, light and quaffable, but doesn't quite reach greatness because of a misbalance in bitter/sweet/sour axis and too much going on (i.e. not elegant). I remember enjoying the hoppy version of this beer more.

Poured from a 22.

A bright golden pour with a thick stark white head. It smelled bright with a hint of fruit.
It has a light taste with hints of grass and citrus. I enjoyed the champagne like bubblyness of the mouth feel.

i am not normally a Saison fan, but I liked this one.

Binny's, Bloomingdale

I love the sensory stimulation from the uncorking of a well made saison. The pop of the cork, the gunsmoke creeping from the bottle, the crackle of tight carbonation being let loose, and the glugging of a golden pour all make for something to be appreciated. The powder white head immediately crackles to two fingers in height, caps off, and slowly recedes to a skimming along the surface leaving spotty lacing in it's path. The body is hazy, straw golden, and glowing around the edges.

A light angel food cake maltiness lays down a solid foundation for the yeast character which seems to dominate the nose. Dusty barnyard hay, underripe pineapple, and a funky lactic quality make for a complex aroma. Tangy wheat emerges as the saison warms. The brett and wine yeast produce a welcoming nose.

The flavor doesn't quite live up to expectations from the nose but most aspects are present. The same angel food cake mild sweetness leads the way. Wheat twang hits mid-palate before the dusty hay, pineapple, and mild lactic funk hit in the back of the throat. Mild grapefruit seems to linger and mildly spicy, grassy hops stick around after the swallow.

The moderate-light body is good but the snappy carbonation is what really puts the mouthfeel in the right place. The bubbles really leaves the sides of the tongue tingly and awake. I would like the finish to be a touch drier but as is stands slightly dry.

I think this beer would really benefit from a few months of aging by getting some of the sweetness cleaned up and creating a drier finish. With that said, this is a damn fine saison right where it stands. The malt profile is no slouch but the yeast profile defines this beer and they did a great job of combining different products. If I had to guess the abv I would never even consider 7%. Drinks like 5%.

Poured into a Funky Buddha Brewery snifter. No freshness date.

A- Pours a hazy light golden color with a 1/2 inch white head that retains a bit before sinking down to a thick ring around the edge of the glass and a mostly full sheet of surface foam. Semi-resilient lacing leaves a thick ring behind on the glass.

S- Nice and funky saison yeast aroma bears notes of lemongrass, wheat and a tinge of hops. Some Brett might be in there as there's some musty barnyard action going on.

T- Yep, definitely some Brett in there as there's immediate notes of green olive. The funkiness isn't overbearing though as there's room for the light hops and crisp malt to bring some equality to the overall profile. Alcohol is superbly well masked as I keep going back for more and more sips.

M- As said before, crisp and spritzy with medium-high carbonation and a light body.

O- This is a wonderfully balanced saison that's a fantastic example of how this style should be done.
