Prairie Noir is our bourbon barrel aged imperial oatmeal stout. We brew this beer with a huge amount of oats to give it an ever so silky mouth feel. Notes of coffee, chocolate, and toasted marshmallow can be found in the flavor and aroma of this beer. Notes of whiskey and carmel are also packed into this beer.

I loved batch 2. This drinks so easy and hides the 12% ABV so well. It's a tad bitter on the backend but still so delicious.

Appearance- Black in color. Pours a one finger mocha colored head.

Aroma- Roasted malts, boozy whisky sweetness, chocolate, and a touch of dark fruit.

Taste- The barrel is pretty big up front with the whisky flavors, but not overbearing. There's a really good balance between sweet and roasted flavors going on here. On one hand there's the whisky barrel upfront which gives way to milk chocolate and marshmallow flavors. Then there is a bitterness from the oak and roasted malts.

Feel- Full bodied (easily the fullest body for a noir variant, low carbonation, and a chewy/rich mouthfeel overall.

Overall- This is a great noir variant with a good array of flavors and a great chewy texture to it. There is some great flavors going on here but I don't think the roast/bitter aspects blend well with the sweeter flavors, at least not, Essentially this is great now, but could probably improve with some age. Worth buying a couple to try fresh and to age.

I originally had this in December of 2014 and rated it a 3.91. This batch is much better or I wasn't feeling it the first time I had it. This batch is very good.

A: This beer knocks it out of the park when it comings to appearance. It is dark black and nearly opaque in color. It pours and a huge head, which is a burnt dark orange / brown. I’ve never seen a BA stout with such a pillowy thick head. Lacing stays the whole time while sipping. It really doesn’t get better looking than this.

S: Smell is a splash of just the right balance of whiskey, roasted malts, and chocolate. You get a little alcohol burn that hits the back of the nostrils.

T: Is right inline with the smell. Smooth and externally well balanced; you get the entire great flavor with nothing stealing the show from the other flavors. It is big and complex, with just the right amount of whiskey, so as to yet again not detract from what else is going on.

M: This thing hops like a bottle of champagne. Carbonation is crazy and both the mouthfeel and head as noted in the appearance confirm this. Body is medium to heavy.

O- This is a diamond in the ruff or a car guys analogy, like finding a 427 Cobra in a barn; I just had never come across this if it wasn’t for a great trade partner. It is well-balanced, smooth and complex . . . what else could you ask for from a BA imperial stout.

Big thanks to Jeff for this one. 750ml corked and caged bottle into a Cigar City snifter. Shared with schen9303.

Pours a 1 finger mocha colored head with moderate retention. Beer is thick, opaque and pitch black. Lacing is thick but sticks close to the head. Real thick legs. Solid.

Nose is plum, prunes, chocolate, mocha, roast, leather, molasses and booze. Rich and very deep.

Opens chocolate, molasses and dark fruit. Roast, plum and more dark chocolate in the middle with a background of leather, oak, and wood. Ends chocolate, sweet cane sugar and syrup. Finishes sweet and boozy with the same aftertaste. Nice complexity that pulls together well.

Full bodied with moderate to low carbonation. Slick and warm in the mouth and goes down oily and smooth. Messy finish with a sticky, lingering aftertaste. Exactly what I'm looking for from the style.

My first offering from Prairie is a good one. Great flavor with a nice, supporting body. I'm looking forward to more!

Appearance - Black with a decent khaki head. Medium khaki head. Good surface foam.

Smell - Whiskey, dark chocolate. Vanilla. Some bright aromas from the booze.

Taste - Whiskey. Not a rich whiskey aroma. Chocolate malt. Some coffee.

Mouthfeel - Boozy. Overcarbonated. Medium bodied.

Overall - Nice, but the whiskey flavor doesn't lend much richness.

Pours ebony with a pinky of caramel brown head. Viscious, look to this, a bit of head retention & lacing

S: Dark fruits in abundance, raisins, carob, faint boozeyness, vanilla

T: Carob, oakyness, vanilla, charcoal & baker's chocolate up front. Raisins, plums, dark chocolate, boozey oakyness as this warms, some sourmash attributes,slight smokeyness, slight dark cherry sweetness & vanilla. Finshes with a nice bit vanilla & oak, sour cherry, a modicum of licorice & raisin

MF: Medium/heavy bodied with subtle carbonation, pretty dry, fairly slick/smooth as this warms

Drinks easy for the style & ABV, this just got better as it warms. Not sure I would age this as it is drinking fabulous right now

I predict this will be highly sought after if kept in the regular rotation

Appearance. Pours a deep dark brown, black in the glass with over a finger of thick dark tan head, great lacing.

Smell. Smooth bourbon and oaky vanilla, some sweet dark chocolate and a bit of black licorice and coffee.

Taste. Woody whiskey and some cocoa, well roasted dark malts, and a touch of vanilla.

Mouthfeel. Fairly full body, medium+ carbonation.

Overall. A nice barrel aged stout but it doesn't stand out quite like most of the other brews I've had from prairie.

Bottle: Poured a pitch-black color ale with a nice large dark brown foamy head with good retention and some lacing. Aroma of deep black chocolate notes with some light bourbon notes is quite interesting. Taste is a mix between some vanilla and bourbon notes mix in with some sweet black chocolate notes. Body is full with good carbonation and no apparent alcohol. Well brewed stout but I was expecting flavours to shine through even more so.

Nice black pour, brown head, a finger, nice lacing., the aroma is a little lacking, but still good. The barrel is mild, with softer whiskey notes, toast, and plenty chocolate. Taste is as well heavy on the chocolate, and really starts to open up when it warms, giving a nice whiskey note, vanilla, charred wood, and toast. Mouthfeel has a nice creamy, soft feel, with a silky body and fullness. Drinks great, I kinda like the lowish ABV. Overall, while not astoundingly aromatic, it make up in tast and mouth feel.

Reviewing the Prairie Noir from Prairie Artisan Ales out of Krebs, Oklahoma.

Score: 95

2012 vintage caged and corked bottle served in a Bourbon County Brand Stout Black Friday snifter and enjoyed on 12/10/13.

Appearance: Pours a black coffee color, with highlights of brown at the edges of the body, with a half finger of khaki head that settles to a thin layer that coats the top of the glass. Very good lacing, excellent retention with a slow cascading quality. 5/5

Smell: Roasted oats, caramel malt, coffee grounds, a little brown sugar. Nice light roast backbone. Milk chocolate too. Just a kiss of vanilla, and a very faint bourbon character. A little oak as well. As the beer warms up, a light cereal grain aroma comes out of the woodwork. 4.5/5

Taste: Oats, vanilla extract, oak woodiness upfront, and bitter coffee throughout. Dark and bitter milk chocolate. A lot more wood character than in the nose, but it marries nicely with the dry finish and bitter character. Hint of brown sugar, dried dark fruit and whiskey towards the finish too, with a light burnt quality. Very bitter leaning, with a few mellow sweet notes overlaying. Quite excellent, and not a hint of booziness. 4.5/5

Mouthfeel: Medium bodied, minimal carbonation. Thinner than expected for an oatmeal stout. Bitter, lightly roast and dry. Love the bitterness and dryness here. 4.25/5

Overall: An excellent, bitter-forward barrel aged stout with subtle barrel characters than compliment, rather than overpower, the base beer. This was a nice change of pace from the usually sweet barrel aged stout. I will be seeking out another bottle or two when the 2013 vintage releases.

Cost: $15 for a 750 ml bottle.

A: The beer is jet black in color and poured with a quarter finger high tan head.
S: Moderately strong aromas of whiskey are present in the nose that died down, leaving a thin head covering the surface.
T: Like the smell, the taste is dominated by flavors of whiskey from the barrel aging process and also has notes of dark chocolate and roasted malts.
M: It feels medium-bodied and rather smooth on the palate with a moderate amount of carbonation. There are some notes of warming from the alcohol.
O: This is a nice beer if you like whiskey bucause it is prominently featured in the smell and taste but isn't overpowering.

Poured from 750 mL bottle into snifter.
A: Pours as black as a moonless night with a nice 1/2 inch dark tan head. Good retention. Looks as heavy (or massive) as a black hole. Extremely inviting.
S: Aroma alternates between dark (bitter) chocolate, whiskey, and roasted malt notes. Hint of burnt sugar and wood smoke.
T: Not quite as powerful as the appearance and aroma suggested. Still, a potent mix of dark roast coffee, bitter dark chocolate, vanilla, whiskey, and a hint of heavy cream. In the background lingers some elusive hop notes. And with warming there emerges a note of melon. Nice complexity.
M: Absolutely silky smooth up front (courtesy of the oatmeal). Also suprisingly light body. Then it quickly turns bitter (chocolate, malt, and hop elements) with a moderate alcohol burn. In addition, the bright acidity lends a nice "fresh" element to this brew. Not the typical mouthfeel of an imperial stout...in a good way.
D: A solid, complex, and at times surprising (pleasantly) beer. A wonderful brew..seek it out!

This is the 750ml corked and caged release from early 2013, opened 03/31/14.

A: The brew pours a standard imperial stout black. Completely opaque. A 1/4 finger tan head appears during an aggressive pour. This quickly settles into a nice ring which leaves pretty nice lacing for a stout this size.

S: Very nice blend of chocolate, oak, roast, and some light coffee. When the brew warms up a little bit, there is a little bourbon making an appearance at the expense of the coffee. Nothing is heavy handed (like Bomb!) in the nose after one year, its all very nicely complimentary and really working together.

T: Its all about balance right now. Oak and a bit more chocolate than the nose. A nice dash of bourbon and some roast. No alcohol heat and no oxidation notes. It's gentle.

MF: Medium, which compliments the flavors very well. Perfect carbonation.

O: Although I enjoyed Bomb!, I feel like that went more for the kill. This is a very well balanced and interesting beer. This was very much enjoyed.

This is my first taste of Prairie, and had incredibly high hopes and expectations; unfortunately those hopes and expectations were not met in the least. Maybe I expected too much, but more likely this was an average Bourbon Barrel stout from a brewery that is way overhyped. Appearance was good, with just an average smell. The mouthfeel was smooth, albeit a little thin for the style. Taste was nowhere near as complex as I anticipated from decription and previous ratings. Heavy amounts of roast and Dark Chocolate, with no sweet undertones left me wanting more. It reminded me of a less complex BA BORIS, with nowhere near the mouthfeel or texture. Not bad, but certainly not great.

I was not that excited to try, there are 12 ish great RIS out there, but I was surprised that this was amazing. Marshmallow taste? Awesome.

Rich creamy oats and toasted marchmallow, milk chocolate, backed with bourbon-y corn sweetness balanced by charred oak and some hints of coffee more akin to a sugary starbucks drink than to raw espresso. Wow, this thing is a monster. From the "second round" this one has the black background label and is listed at 11%.

A: Nearly black pour (brown around he edges) with small, light brown head.

S: Sour cherries dominate (although somewhat less so as it warms up). Dark fruits and light vanilla and coffee also present.

T: Harsh wood/oak notes at first, along with bitter chocolate and burned roastiness. Some dark fruits, coffee, and cheap whiskey flavors are there too, along with smoke and a touch of sourness.

M: Somewhat thin for the style.

O: It improves as it warms - I'd recommend drinking at or near room temp - but this was disappointing and borderline unpleasant. I like most offerings from Prairie, and really expected more from this beer.

Thanks to Nathrax for sending this over in a trade!

A: Pours a very dark brown, almost but not quite black, with lightening on the edges. Decent amount of sedimentation can be seen in the glass. Less than 1/2 fingers width of tan colored head builds and then quickly dissipates down. Leaves a fair amount of lacing.

S: An almost sour dark fruit aroma, roasted malt, subtle cocoa. Oak and a little bit of whiskey booze are the only components I get from the barrel, and are faint.

T: Roasted malt, booze, chocolate, some oatmeal stout flavors, whiskey oak-like characters from the barrel.

M/D: Medium body, thinner mouthfeel that I expect in the style, appropriate carbonation, not terribly smooth, ABV is very well restrained though and drinkability is good.

O: Kind of disappointed in this one. I would certainly prefer stronger barrel notes and a fuller mouthfeel. Flavor/aroma could be bolder as well. Still good, but I had higher expectations.

A: Pours an opaque jet black in color with light to moderate amounts of visible carbonation and some dark cola brown highlights. The beer has a half finger tall dense foamy dark tan head that slowly reduces to a very thin film covering the majority of the surface of the beer, a small patch of medium thickness, and a medium thick ring at the edges of the glass. Moderate amounts of lacing are observed.

S: Moderate aromas of whiskey and oak barrels with some lighter notes of roasted malt, chocolate, and coffee.

T: Upfront there are moderate flavors of roasted and sweet malts with some lactose notes. Light to moderate flavors of whisky and oak. Some much lighter notes of dark chocolate and caramel. There is a light amount of spiciness in the aftertaste, like from a rye whiskey.

M: Heavier than medium bodied with moderate amounts of carbonation.

O: Really enjoyable, this beer has great flavors and aromas contributed from the barrel aging. The alcohol is well hidden making this beer easier to drink. Definitely one worth finding and my first beer from Oklahoma.

A: (poured into mini-duvel glass) Pours deep black with little head retention.

S: Getting bourbon right off. It's nice cause the bourbon smell has some chocolate and cherries mixed in perfectly with it.

T: More bourbon than I expected, which is awesome. Must have been aged for a while. I get some dark cherries and raisins with the bourbon. Very pleasant taste. There's also plenty of vanilla, oats, and dark chocolate. Graham cracker with some cinnamon and wood as well. I'm getting some bready notes and some snicker doodle cookies. This is awesome!

M: A nice medium-full. This beer has a velvet-y feel to it as well. It's a desert.

O: Prairie Artisan did a fine job on this one. I didn't think I'd find it at the local beer shop, but luckily they had a few left. I would give this beer an A+ score because it definitely deserves it. It's very well-made.

Pours blackish brown into a Prairie snifter with a half-finger head. The aroma's of rich fudge, dark fruit, vanilla and bourbon. The whiskey is more predominate on the tongue, bringing out the vanilla and caramel. The chocolate is still there, but not to the degree suggested by the nose. There is more booze to this than most of the Bomb! varieties, and it's quite warming. The whiskey thins the mouth somewhat, but it's still on the thickish side. This is good as-is, but will benefit measurably from cellaring.

A: Pours pitch black with huge, foamy, mocha colored head.

S: Coffee, roastyness, Caramel, and booze.

T: Booziness up front. It's sweet, roasty, and slightly smokey. Next there's coffee, chocolate,and a slight fruitiness. The smokey, roasted coffee taste lingers on the tongue.

M: Medium-heavy body. Very silky smooth texture that seems to coat the mouth.

O: An excellent stout, good complexity, and the barrel seems to add about the right amount of sweetness.

Very excited to try this beer. Bought from Byron's Liquor store in OKC for around $9.

Odd persnicketedy thing... the wire cage was really attached tightly. I almost had to reach for the pliers to get the wire thing twisted off. The cork underneath was easy enough to remove though.

Aroma was fairly subdued (not as aromatic as say a Bourbon County Brand Stout). Very slight toasty and chocolate notes.

Pours a dark inky black that takes on a brownish tinge on the edges of the glass when held up to the light. Nice tan head that appears a few seconds after pouring but then gradually disappears.

Flavor... this beer is extremely dry and smooth. Lots of toastiness. A little bit of unsweetened chocolate, a hint of mollasses, Some spices. Hops are there but they are hard to pick out. Overwhelming amounts of alcoholic warmth (I think my bottle might be stronger than 9% ABV). Definitely some whiskey in there. Also some espresso. Really there is so much going on here that is hard to pick out all of the elements. Mexican vaniila or maybe a little of unbleached turbinado sugar. It is interesting to me that while this beer is very dry, that I keep finding comparisons to different kinds of unprocessed sugar (i.e. molasses, turbinado sugar, brown sugar, etc.).

Mouthfeel is very smooth (as expected with the oatmeal). It is an interesting concept but I think I prefer the slightly syrupy/fuller version of some whiskey barred stouts I've had. As it warms, I like the mouthfeel more. It starts to pick up some nice creamyness along with a tinge of oilyness in the aftertaste (hard to explain but I like it).

Overall, this is a very interesting beer. I want to drink it again.
