Appearance: color is similar to a honeycomb or canola oil. Head froths up quick, yet dissipated just as quickly, it was thin and ended up looking like barely beaten egg white. Bubbles are few and sit around the edge of the glass.
Smell: Like a farmhouse. Sweet, slight herbal, almost shampoo like. A bit of pine and hibiscus. Not bad balance slightly more hops which is what I would expect for the style.
Taste: apple sauce really quick up front then flowery-hibiscus, slight rose and heavy clove.Hops are there yet not huge, good balance.
Mouthfeel: Not bad, neither smooth nor coarse. Slightly dry and medium to heavy bodied. tingly lingering carbonation that traps that flavor in and lingers on the tongue.
Overall Impression: Not bad, the clove was huge but not unpleasant. Just different I suppose. A good beer overall. I could see myself drinking this watching the snow melt and waiting for Spring to come.
Food Pairing: hotdogs with relish. Taleggio cheese and parmigianno crackers. Grilled swordfish. For dessert, rum braised mango and some kind of vanilla cream

Literally right across the street from where I work in CT... worth a taste?
Appearance - I love the way saisons look... slightly cloudy, golden honey. This one is spot on. One finger of head on a pour.
Smell - I get the yeast smell right off the bat with a slightly fruity almost raspberry/strawberry note. Well balanced.
Taste - Slightly more hop presence than I'm used to, but well balanced. Not as much yeast as other saisons, but has a good malty quality with some of those bright berries I mentioned during the smell. Finishes bitter, but not overwhelming.
Mouthfeel - Medium carb. Coats the mouth well and fully hits all taste buds. Very nice!
Overall - Not my first choice for a saison, but I'd have this one again. Drink local!

A - Poured a 12oz bottle into a small snifter. Hazy, straw body. Thin white head develops and fades quickly. Little lacing.
S - Amazing. Strong fresh ground pepper.
T - Follows the nose with pepper, but it is complimented by sweetness, ripe banana, ever so light malt. They've got a winner of a yeast strain here.
M - Medium body, but highly carbed so it moves past the palate. Slightly sweet aftertaste. Dries out between tastes.
O - it might just be my progression into the Saison category, but I am really into this beer. It has a ton of flavor and complexity for a beer weighing in at 4.8%. Definitely try this one.
