Formerly Canvas Series: La Bonte Plum
The second release from our Canvas Series is La Bonte our Brett Farmhouse Ale with Plum. The Canvas Series is inspired by our need to constantly push ourselves in new and creative directions with the brushes and ink that our time crafting sours and wilds have provided us. La Bonte with plums fits right into that ethos. Open fermented with our house wild culture and blended onto Italian Plums (one pound per gallon), this is a beer we can't wait for you to try either fresh or cellared.

This beer pours a brilliant amber hue with golden highlights. It is topped with a fleeting beige head that leaves spotty lacing.
It has a nice sour aroma with a little funk. The plum is complimentary and not overwhelming.
Great sour flavor. It is not too sour. The plum adds a little fruitiness to battle the sourness, but I love the sourness. It has a little funk.
Light bodied with a dry mouthfeel

Pours yellow orange gold with a creamy white foam head. Notes of beautiful funky fresh plums, not too fruity, plum flesh, plum skin, sweet cinnamon-esque spice, tart apple, cider, lemon, stone fruit, bready crackery malts, oak foeder, hints of leather, barnyard, hay, straw, with floral earthy grassy hops. Feels medium-light bodied, creamy with moderate smooth carbonation. Overall a nice foeder aged sour brett farmhouse ale with Italian plums.

500 ml bottle into tulip glass, bottled on 8/5/2016. Pours slightly hazy/cloudy deep golden amber color with a 2 finger fairly dense and rocky off white head with fantastic retention, that reduces to a nice cap that lingers. Thick soapy lacing clings on the glass, with a fair amount of streaming carbonation. Fantastic appearance. Aromas of big juicy, lightly tart/tangy plums, fruit skin/pits, peach, pear, apricot, lemon, lime, orange, pineapple, mango, melon, red/green apple, white grape/wine, peppercorn, oak, hay, straw, grass, wheat, cracker, and white bread dough; with lighter notes of leathery/musty/lacto funk, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of plums, fruity/funky/acidic/spicy yeast, oak, and pale/wheat malt notes; with great strength. Taste of big juicy, lightly tart/tangy plums, fruit skin/pits, peach, pear, apricot, lemon, lime, orange, pineapple, mango, melon, red/green apple, white grape/wine, peppercorn, oak, hay, straw, grass, wheat, cracker, and white bread dough; with lighter notes of leathery/musty/lacto funk, and yeast/oak earthiness. Light-moderate peppery Brett/oak tannin spiciness, fruity/lactic tartness, and fruit tang on the finish. Lingering notes of tart/tangy plums, fruit skin/pits, peach, pear, apricot, lemon, lime, orange, pineapple, mango, melon, red/green apple, white grape/wine, peppercorn, oak, hay, straw, grass, wheat, cracker, white bread dough, light leathery/musty/lacto funk, and yeast/oak earthiness on the finish for a good bit. Fantastic complexity, robustness, and balance of plums, fruity/funky/acidic/spicy yeast, oak, and pale/wheat malt flavors; with an awesome malt/spicy/tartness, and tangy fruit balance; with zero puckering/astringent flavors after the finish. Fairly crisp finishing. Light-moderate increasing dryness from lingering tart/spiciness, tangy fruit, and carbonation. Medium-plus carbonation and medium body; with a very smooth, moderately creamy/grainy, acidic/tangy, and fairly tannic balanced mouthfeel that is great. Minimal warming alcohol for 6.5%. Overall this is a fantastic fruited sour/wild saison. All around fantastic complexity, robustness, and balance of plums, fruity/funky/acidic/spicy yeast, oak, and pale/wheat malt flavors; very smooth, refreshing, and fairly crisp to drink with the mellowly acidic/tangy/spicy/drying finish; not overly lactic. Fantastic balance between juicy plums and Brett/Bacteria complexity; with great oak foeder presence, and pale/wheat malts against acidity. Minimal residual sweetness with crisp dryness. A highly enjoyable offering, and outstandingly spot on style example.

A - Hazy orange gold, with pink-purple tint, white head, minimal, with some ropey lacing.
S - Fruity sourness, a bit of horsey funk, and a undefined plastic sharpness.
T - Tart open, plum flesh, and a touch of minerality, mild skin bitterness that lingers in the close.
M - Smart crispness, sharp and a bit prickly in the close.
O - Quite delicious. Controlled bite and careful design produce lovely notes without getting muddy or harsh.

Pre-acquisition bottle. Figured might as well drink it now. Pours a cloudy/hazy orangish light coppery-ish color with off-white head. Tartness, funk, berries, and some wheat on the nose; follows onto the palate. Light bodied. Finishes with tartness, and some distinct plum notes.
