Inspired by the Trappist Dubbel style, Rubbel is an ode to a Belgian classic with a contemporary, rum-barrel aged twist. Our version of the dubbel pours amber-brown in color and emits aromatic qualities of toffee, sweet-candi sugar, toasted bread, raisins, mild molasses, and faint oak. Medium in body with a pleasantly dry mouthfeel, Rubbel drinks with a restrained malt sweetness and complementing flavors of caramel, dark fruit, molasses and underlying, yeast-derived spice.

A little light in color for the style, the thick, durable head gives it some aesthetic appeal at least. A gentle aroma of oak, molasses, and chocolate doesn't impress much, but the flavor is richer and more defined. There's a nice rum essence without any palpable alcohol anywhere. It's smooth and subtle, but there's no real Belgian yeast presence. All told, a solid rum barrel aged experience.
3.43/5: My first Trillium beer isn't a showstopper, but it's very likable

750mL bottle from 7Sport (thanks man!). Bottled 1/21/15. Served in a goblet.
Pours a deep burnt amber with a tall, three finger cap of beige head. Near solid layer and slight halo remain, leaving some expansive sheets of lace in their wake.
Aromas are very sweet overall. Rum, cherry, candy syrup, yeast, prune, plum, vague banana and a little caramel. Nice.
Flavors are a smooth blend of strong, flavorful Belgian yeast, varied fruits and soft, sweet rum. Berry seeds, currants, candy syrup, cherry cough syrup, toffee, rum, prune, candied banana peel, faint wet wood and a slight nip of booze. A pleasant harmony is reached between malts, yeast and barrel.
Creamy, medium body with moderately soft carbonation. Wood, stone fruit, toffee and rum in the aftertaste.
Trillium's Rubbel is smooth, rich and easy to drink. The rum barrel seems to round it out and add depth to the fruity yeast. Certainly worth a try, particularly for fans of the style.
