Introducing Soak: our new line of sour wheat ales, aged in oak, featuring a variety of single fruit additions. We place a base brew crafted with 60% wheat grist in 600L oak puncheons for 3 months with fermentation duties shared gracefully between lactobacillus and our Native New England mixed culture. Loosely inspired by the cold-maceration process used in winemaking, we blend fruit directly into the barrels to “soak” for enhanced extraction of unique colors, aromatics, and flavors. Delightfully acidic, but not funky, our Soak series is an approachable sequence of wild offerings that we are proud to share. Blackberries bring an assertively tart, yet unsweetened flavor profile, striking burgundy-fuschia hue, and re-enforced tannic structure to this first iteration. Blackberry Soak is dry with undertones of oak and a subtle wheat grain finish.

11 oz bottle dated 6/21/18, served cool room temp into a tulip glass.
A wheat based sour ale would essentially be a Berliner-weisse. This is a fruited sour.
L: Dark plum with a white pinkish head that reduced to lacing in a few minutes.
S: Blackberries/black raspberries and vanilla/ oak. Maybe a hint of lemon or tart citrus. I could smell that it was going to be a sour beer.
T: Fruity and tart, but not too much. It's along the lines of a tart lemonade, but without the sweetness. The fruit is pronounced, but there are other flavors also, such as a hint of white wine, probably from the oak aging. there is an underlying sweetness from the wheat. I scored it a 4.25 because I felt the flavors could have more depth.
F: It has a light body, not over carbonated (appropriate for the style; for example, it would be over carbonated if it were a stout). The wheat base gives a mouthfeel just thick enough that the flavor lingers. This is a solid representation of the style, and is approachable for people new to sour beers.
O: I wish I had more. I tend to prefer sour beers on hot/humid days; however, had this one on a cold New England winter evening and enjoyed it.

L: Initial large white pinkish foamy head but reduces to nothing within a moment.
S: Blackberries and some oak barrel chardonnay notes.
T: Fruity and delightfully sour, but not overly so, with oaky and wheaty notes. Assertive but not astringent.
F: Light bodied, moderately carbonated. The usual very strong construction and balance from Trillium. Very crisp and refreshing.
O: Right up there with Russian River. Is there anything they can't do well?

Poured from a 375 ml bottle (latest batch) into a Trillium tulip.
Pours a maroon cloudy body with a small pink head the reduces to leave no lacing or retention
Heavy raspberry aromas - quite juicy and tart on the nose, with some yeasty funk too.
On the tongue it’s pretty sour and dry, tannic and juicy with lots of raspberry, blackberry, finishing quite dry. Not as carbonated as usual trillium sours, easy drinking light body
