Poured from a 750 mL bottle into a snifter. I don't see a bottle date, but I picked this up at the brewery last week.
Appearance: Pours a slightly translucent medium amber/gold and leaves a couple fingers of fluffy white head, which take some time to fade to a small fluff, leaving plenty of lacing.
Smell: Big lemon zest, fresh peppercorn, slight hay funk, white grape skins, citrus rinds, some earthy tones.
Taste: Bready malts, peppercorn, some cloves, lemon rinds, lemon zest, citrus hops. The bready/yeast flavors are the most prominent, but there are some nice varieties of flavor in here.
Mouth-feel: Well carbonated with thin to medium body. Finishes crisp and a little bitter.
Overall: This is a nice, refreshing saison. Fairly straight forward but with some nice flavors to it. The aroma is really nice as well, with prominent lemon and pepper flavors. A good beer to kick back with on a nice, sunny day.

Appearance: Hazy dark yellow leaning toward fresh wheat. Head is mega fluffy, loose, bright-white and clingy. Moderate retention keeps a small clumpy cap at all times. Moderate to lively carbonation. Mega pillowy head. Rather delightful.
Smell: Esters. Fruity with a soft blanket of spice. A touch of clove. Banana, ripe banana. Clean pale malts add a touch of sweetness and a nice bready backbone. Powdery yeast with some hints of damp and musty basement. A touch of lemon and then funk. Yeast runs closer to Belgian than I would anticipate. A bit floral. A touch of pear and apple, but it's buried and only really comes out as it warms. Mild spice note, but it's directly from the yeast. Clean and lightly sweet. Really mellow and soft.
Taste: Fresh white bread and some mild fruity esters. A touch of apple, pear, lemon zest, and generic fruitiness. Malts are incredibly light and sweet with a soft toasted element. Some yeasty spice and ripe banana. Bready and light. Nicely floral, like dried petals. Almost perfume-like in the back. A push of wheat and something that almost comes across as rye. Mealy red apple. Runs relatively clean with a slight powdery yeast finish. Grass, a touch of damp basement, and a funky field flavor.
Mouthfeel: Medium leaning to light body with a moderate carbonation. Nicely dry with some astringency. Drinks easy.
Overall: You can do a lot worse.
A saison-Belgian hybrid. Yeast runs a bit heavy on the esters and pushes it out of firm saison territory. Nice and clean and easy to drink. Well worth trying and I imagine it's better at the source.

Growler was poured into a tulip glass.
Appearance: This beer poured a one finger head that reduced to a thin layer. Nice lacing from reduced head too. It is a slightly hazy yellow with good vision of bubbles coming up through the glass.
Smell: Spicy, herbal, floral, yeasty, vanilla, bready, apple, pear, and a little citrus.
Taste: Spicy yeast, herbal hops, bitterness, bready pilsner malts, pale malt sweetness, apple, pear, citrus, and a little lingering bitterness.
Mouthfeel: A bit smooth, chewy, spicy, bitter, dry, light bodied, and medium to high carbonation.
Overall: A nice local farmhouse ale. A fine brew that can be enjoyed during the seasons.

32 oz growler, poured into a tulip glass.
A -- pale straw color. White head, thin. Good lacing, and retention. Clear with good nucleation.
N -- Banana yeast. Clove/spiciness. Something sweet. Can't put my finger on it.
T -- Follows the nose. Hoppier than a normal saison with a decent level of bitterness.
M -- Bubbly...
O -- Quite good. Enjoyed my first experience at Trillium today for my sister's birthday.
