Appearance: 1/3 inch head, medium-high carbonation, gold in color, clear

Smell: sour apple apple, grass, and hay

Taste: sour apple apple, grass, Belgian spices, and hay

Mouthfeel: sweet start with funkiness and mild bitterness, light bodied and medium-high carbonation

Overall: A good saison. Very clean and it hits all of what I expect from the style. Well crafted and enough to keep me curious about this brewery.

Light amber color, hazy, with a finger of frothy white head that sank to a wispy layer, coating the glass with lace. In the nose, grassy funk, light fruity esters, peppery spice, pretty standard stuff for the style, all where it should be. The taste reflected the nose, notes of pear and banana, wet grass, moderate funk, peppery spice, with a crisp, herbal hop quality, and an earthy finish. Light-medium body, nice drinkability. There's nothing new and amazing going on here, but it's a very good bottled saison, and a good representation of the style overall.

Pours a hazy yellow into the large Duvel tulip, with an appearance somewhere between lemonade and clouded honey, topped by thick, meringue-like suds. The beer has a muted lemony aroma, with no acidic edge; instead, it almost leads to an expectation of mild sweetness. What's actually delivered to the palate, however, is an unusual, crisp, vegetal freshness--not lemony at all, but more suggestive of al dente yellow squash or juicy, raw kernels of just-picked corn. This unlikely combination of smell and taste works very well, resulting in a pleasant and quaffable brew that is further distinguished by its rich, unexpectedly smooth texture. Quite good.

A - Slightly hazy, straw/gold. Huge fluffy white head. Fades quickly to a rocky head and leaves nice lacing.

S - Peppercorn, lemon zest, some spiciness, maybe from the yeast. Some hay.

T - Banana, clove, strong fruity esters. None of the flavors are too overpowering. A very balanced farmhouse ale. Bitterness lingers along with some pepper.

M - Medium body, Medium to high carbonation, but definitely not spritzy. The carb level is just right.

O - I had high expectations for this ale going in and I am not dissapointed. One finest saisons I've ever tried. I'm lucky to have tried this and I will certainly seek out more from Trillium.
