Hazed, light yellow with not much head, and – maybe I'm imagining this – just the faintest tinge of green. A sort of yellow chartreuse beer. It smells an awful lot like pickles. Cucumber, a touch of mint, lactic acid, lemon, coriander – really refreshing, really summery. It tastes mostly like fizzy cucumber juice mixed with a little lemonade and a sprig of mint. Associations with Pimm's are inevitable, but this is cleaner and less sweet than that. This is extremely unusual, one of those beers that 'doesn't taste like beer,' if you know what I mean, but it doesn't taste like anything else – prosecco maybe? But that oddball quality shows just how interesting beer can be. I wonder how it would taste with gin in it...

When you get groups like Fyne Ales and Wild Beer involved, you know a party is happening! And as old-world flavors like cucumber and mint are on the rise in the cocktail world, it was only time before we see them in the craft brewer's cupboard as well. So this party is either for contemporary hipsters or for the aarp crowd.

Hazy straw and capped with a spritzy champagne-like froth, the beer's loosely arid structures cast about a host of refreshing and vegetal aromas. Cucumbers wash over the olfactory senses with a background of grain, hay, pepper and curious mint. Its dryly sweet upstart is delicate as its powdered sugar and short bread sweetness bounced from the tongue almost immediately.

Over the middle, the cucumber also lifts and float about the stronger saison flavors that work on the tastebuds below. With its fast dissolving sweetness and wafter structure, the taste leads with fresh-cracked peppercorn, light cumin, hay and husk. Dried fruits peels of lemon and orange are off-melon as its finish is tangy, hinting toward sparkling dry white wine equipped with a firm carbonic bite.

As its high effervescence give a spirited textural experience, the dry and light-bodied beer seems seltzer-like with a twist of cucumber and the evaporated refreshing cooling effects of mint. In true farmhouse fare, the ale finishes lightly vinous and peppery in a short aftertaste.
