Poured from bottle into a weizen glass
Appearance – Pours a massively hazy yellow color with a nice thick pure white head. THE thick head persists for a very long time, slowly fading over time to leave a great level of streaky lace on the sides of the glass.
Smell – The smell is heavy of wheat and yeast with a moderately strong smell of spices. The spices are mainly of clove and cardamom but are joined by some light pepper as well. Along with these smells is a big lemon citrus and grassy aroma producing a nice yeasty and lemony Hefeweizen smell overall.
Taste – The taste begins with a bready and smooth wheat taste. It is on the drier side from the start, but does have some sweetness of lemonade and banana. As the flavor advances yeast begins finding its way to the tongue, with it growing rather strong at the end of the taste. While the yeast gets stronger so too does a lighter clove flavor. At the same time the yeast and clove grow stronger the sweeter flavors of a lemonade nature lessen, with a light grassy and hay like flavor coming to the taste at the very end and combining with the rest to leave a very smooth but somewhat subdued Hefeweizen flavor to linger on the tongue.
Mouthfeel – The body of the beer is on the slightly thinner side with a carbonation level that is on the lower side as well. A bit more carbonation may have been slightly more fitting as it would have complemented nicely the lighter body in making for a very easy drinking brew.
Overall – An alright Hefeweizen. It looks fantastic and has a good aroma, but the flavors are just a bit too subdued and the carbonation is a bit too light. Just OK.

From a 500 ml bottle (code says 9313N09) into a hefe glass.
A-A normal pour produces a thin head of barely one finger of white foam. The head drops quickly to a cap that hangs around for a bit. The brew is a bit dull looking with a dijon mustard hue as a result of the yeast.
S-The smell is surprisingly sharp and grassy for a hefe. There is very little clove/banana going on here. Just a bit of lemon and grain.
T-The taste is also light on the banana/clove yeast, but there is a bit of doughy yeast. The main flavor remains a grainy lemon with a bit of astringent grass/straw. It is certainly different from many hefes, but not entirely unpleasant...almost pils like at times.
M-The feel is a bit watery with soft, moderate carbonation and a medium heft. It is really drinkable, however, which is what I want in a hefe.
O-This is a pretty mediocre beer but it has some interesting characteristics. The graininess and lack of typical hefe yeast flavors is disappointing, but the feel is pretty good and goes a long way towards making up for the lackluster smell and taste. Maybe it is the "organic" label working into my subconscious, but I feel like this beer actually tastes like the ingredients that go into it, and not like some magical potion. Weird.
