Northern European-inspired dark beer mashed in an oak puncheon through a bed of juniper branches. Brewed over a wood fire in our copper kettle with additional juniper branches, then aged in oak for a year with wild yeast and bacteria.

Shades of dark brown with a tan head. Aromas of wild oak, wood root, juniper, pine, campfire, mulled berries, and earth. Taste focuses on the woot root, sour oak, and juniper up front powerfully, smoke, earth, and wet leaves transition to the mulled berries and hints of booze. Feel has plenty of wood, botanical and wild textures to go with the smooth and turbid body. Odd (shocker) but a good sahti

“Barrel-Aged Sahti” 2021 bottling.
Dark coffee brown, almost black, a finger of creamy ecru foam and spotty lacing all around the glass.
Woodsy aromatics, distinctive herbal juniper.
Lightly tart, with a dark berry and juniper flavor, dark roast in the background, woody dry aftertaste. Hint of wild yeast also in the finish, but hard to pinpoint. Medium bodied with a good malt backbone, dry and pleasantly acidic, with a creamy texture.
Drinks like a rustic Oud Bruin with juniper, really nice if those elements appeal, which they do in my case. Great complexity and balance, seems like it was put together well. A unique Sahti, probably the best i’ve had.

A unique brew. Has a complex and layered taste profile of rye, juniper/gin berries, plums and some chocolate in there. Not sure where that comes from. There is a herbal mint note in there too. Smooth with a jagged edge, this has a weighty feel to it without being too heavy.

Pours a dark brown color. 1/4 inch head of a tan color. Good retention and decent lacing. Smells of spruce, sweet malt, slight roasted malt, and a hint of spice. Fits the style of a Sahti. Mouth feel is smooth and clean, with a low carbonation level. Tastes of strong spruce, hint of spice, slight sweet malt, and a hint of roasted malt. Overall, good appearance, aroma, blend, and feel. The body is simple, but as I have read the categorical description of Sahti, that is sufficient.
