Handsome orange brown in the St. Bernardus globe. Lots of lacing in the glass. The aroma is deeply hoppy and quite wonderful with a ripe peach scent.
It's surprisingly bitter from the first sip. So bitter it has almost a sour sensation. The brewery rates this at 100 IBUs, and they're not exaggerating. The chalkboard lists the hops as Chinook. But there is a sweet malty base with a nice burnt sugar taste. In spite of the excessive bitterness, this is almost likeable. The sudsy mouthfeel helps the medicine go down. Overall, though, this is something like a dry hop liqueur. Hop fiends, take note.
This really should be called a Strong IPA since it's not quite malty enough to be a DIPA. It's an odd and interesting duck for a brewery that is so refined and not given to the usual outlandish San Diego IPAs. From the big growler filled at the brewery.
