A: Poured into a Rochefort chalice not too vigorously. 1/4 in. head dissipates fairly slowly.

S: Raisins at first, maybe a little banana. As it warms a dark, honey-like smell is wafting in and out. Sort of molasses, but, not quite. Figs show up as it warms even more. When will it stop evolving? Can't quite put my finger on this nose, but, it is rather heavenly. Complex is a word that comes to mind, but, it's more than that, sort of all-encompassing. Now, even later, licorice comes through as it loses carbonation.

T: Heat is apparent, but, in a good way. Figs, raisins, molasses and a wonderful yeast. Can't wait to crack another, when the snow flies, and go outside for a walk.

M: Superb mouthfeel, carbonation is spot-on, the way beers should strive to be.

O: This, to me, is the ultimate Christmas beer, it has a certain holiness to it, and I am not a church-goer! Glad to finally try this brew, even more glad I have 5 more!

330 mL bottle poured into a de Struise chalice. 2001 bottle. Best by 9/7/2004. Won this bottle in a raffle at the Funky Buddha.

Appearance - Pours a murky reddish brown with a surprising off white head. Chunky and sedimenty. Collar of foam.

Smell - Sherry and other oxidized flavors. Very fruity. The caramel malt still comes through.

Taste - Significantly better than the aroma. The oxidation makes it a little creamier. Lots of sherry. No booze. Buckets of dark fruit. A touch sweet with a somewhat rough cardboard finish.

Mouthfeel - No booze. Low carbonation. Way too oxidized, but it's still pleasant to drink.

Overall - I should really review a fresher bottle. This is really oxidized but the quality of the beer still comes through. Westy with sherry.

One of the few beers that deserves an all 5-pt rating, this beer is mind blowing.

Bottled date was 4/13/12, poured into 15cl Westvleteren XII glass.

Great deep dark brown color with a small light tan head, the aroma is sweet like candy with hints of plum and a very slight sniff of alcohol but not immediately present. The taste is incredibly complex, so much going on with the belgian candy sugar, molasses, the roasted notes from the malts and the dark fruit just all meshes so beautifully together with what is an amazing yeast strain. To get to 10% with almost no presence of alcohol lingering is quite amazing while keeping enough residual sugar that it lingers on your lips, it's by far the best quad / belgian strong dark ale I've ever had. The body is rich, smooth and complex with medium carbonation to enhance the sweetness and finish, just great overall beer. I wish all beer was this wonderfully crafted.

A-rich brown with a reddish tint.

S-belgian chocolates. dark fruits. dark grains. oh so complex! smells so mellow. might even have a touch of hops to it. good strength

T-comes in with a great and bold taste of belgian grains and dark fruits. actually has quite a touch of booze and even some bitterness to it. wow its a strong taste that will leave a long lasting impression. its actually a pretty hot beer, much like most belgian quads i've had.

M-medium creamy carbonation with a decent bitter finish

O-this is definitely a world class beer. however, its not my favorite quad. its fairly harsh. it has a taste that kicks back with a heat. i was hoping the flavors to be a bit more mellow. i don't regret spending a lot for it. i recommend anyone to do the same, if just for the reason to kill you curiosities.

Poured from bottle as part of Blind taste test with Rochefort 10 and Koningshoeven Quad.

Appearance: Camel Brown, thick head that clears, Sediment and flowing carbonation

Smell: Brown Sugar, Molasses, Lighter and less pronounced than expected. A little heat from the alcohol.

Taste: Yeast and carmel malts. Esters. Brown sugar again. Again, a little less substantial than expected. Sweet with good candy flavors. Again with a little heat from the alcohol.

Mouthfeel: Lots of carbonation. Really foams up in the mouth across the palate. Nice

Overall: Very good but a little less substantial than expected. Compared to the Rochefort 10 its a little underpowered and much sweeter. Very good beer but not earth changing. Much more enjoyable over the long run than the rochefort 10; more welcoming and pleasant.
