We took an English Barleywine inspired recipe, ran it through our coolship, then transferred into Caribbean Rum barrels for fermentation and aging. After well over a year, the result is a pronounced acidity and oak character balanced by a full body, mellow carbonation and caramel sweetness accentuated by the barrels. A slow sipping and full flavored dessert beer.

750 mL bottle poured into a snifter.
Appearance - Deep brown body. Medium khaki head and a medium collar.
Smell - Weird acidity. Strange nutty malt. I get some wood, but not rum.
Taste - Rum and sourness give it a fruity flavor. Lots of deep caramel malt, but no sweetness. Kinda nutty and woody. Rum lingers.
Mouthfeel - Kinda boozy. Medium sourness. Well carbonated.
Overall - Everyone else in our group said this was gross, but I didn't think it was bad.

A- Dark brown, nearly black body, but mostly caramel coloured, one finger white head with good retention, no lacing.
S- Smells at first like a sweeter Flanders Red, with moderate funk, decent lactic acidity, a bit of caramel. As it warms up, you get more menthol, rum and oak. And at room temperature, it finally smells like quite the sweet toffee-forward barleywine. This is very nice and complex over time.
F- Funk, lactic acidity. Strong sour quotient. Zero heat, but a solid caramel sweetness throughout. A bit of that rum on the background, but otherwise sour and oaky. This is quite pleasant.
M- Medium bodied, reasonably dry but not overly so, decent carbonation, nice oaky tart finish. Zero heat- I'm told this is >18% ABV even though it's listed at 13.9%. They aren't messing around here.
O- I see why it's a love it or hate it beer, but I think it's a matter of managing expectations. This is a deliciously tart beer regardless of whether it's a barleywine base or not.
