Yellow in color - a bit sour for my own liking. To their credit the bottle art was really nice. One noticeable thing was the honey taste towards the end.

Bottle to tulip.
The appearance was a fairly clear bronzed bright yellow/copper color. Quickly dissipating small white foamy head. No lace.
The aroma had a blend of crushed lemon jolly ranchers punching at some grassy bitter ends. A sour and tart mixture taking it's toll and letting a breathable green tea come in at the very end. Nurtured honey quality slightly coming in at the end.
The flavor moderately leaned towards a combination of sweet, tart and sour character, reminiscent of jolly ranchers with some honey and tea. Sticky aftertaste composing of lemon jolly ranchers, honey, green tea and a touch of green apple.
The mouthfeel was about medium bodied with a fair sipping quality about it. Good carbonation. ABV felt appropriate. Fairly sticky lending a hand to the same sort of finish.
Overall, wow, what a way to open up the warm end of May! Up to 77° here in my part of Vermont today and this was more than appropriate for a Friday evening!

Poured from the last bottle of the original release into a trusty goblet.
A - Color of honey, sunflower, golden yellow. Pillowing cumulus cap supported by kinetic even nervous carbonation.
S - Dusty, apricot, that Brett funk is deftly applied, rising off the glass hints of chalk, white peach skin, and a touch of lemon grass, warm honey and green tea.
T - The honey element is dominant, tea leaves, and ripe peach. The funk transfers to the palate in the form of sourdough toast, quite lovely
M - Medium in body, the surfaces are all coated with a touch of oiliness. Carbonation is strong but gentle, nudging the offering off the tongue. A long sweet linger is delightful.
O - I picked this up 2 years ago, had one fresh, so glad to have kept this, the impact was positive. A fine saison in the fall flavor category. Lots of ripe fruit character, and so delicately applied Brett..

Aged bottle from spring 2015 til fall 2016.
Bottle popped itself open before I even got the wire cap cover off the cork. Bottle fizzed and foamed over for several minutes before I poured off my first sampling.
Thick white sticky head of foam, as you might expect based on the carbonation levels noted above. Once allowed to warm up a bit and calm down on the counter, the head resides to a thin film of head across the beer's surface.
Initially, the beer had an unpleasant medicinal, astringent aroma and taste that was a bit off-putting, but after allowing the beer to warm up, it completely transforms. A bright funky aroma including the essence of the brett yeast pops out nicely, and the taste follows with a nice citrusy tartness to round out the funky farmhouse experience.
The carbonation levels are excellent, providing a bright fizzy frothy mouth feel that completes the overall experience.
Overall: A great brew, and one I'm glad I waited to pop open.
