When we launched BorrachaBaker made us some s'mores shaped like dinosaurs for our launch event. Then, we made an imperial stout with graham flour, marshmallow fluff, vanilla, and cocoa nibs with Amager and West Lakeview Liquors. Then, we brought this beer to the Brewpub Shootout and paired the beer named after the food with a food the beer wasn't named after. People were confused and named it best beer (or was it food?) at the Shootout.

Had on tap as part of an off color tasting. Appearance is dark/black. Head was minimal to almost non-exsistant for my pour.
Odor was pretty complex. Creamy chocolate was number one. Sweet sugar marshmallow is second.
Taste is really pleasant. Hits first with a mix of chocolate and marshmallow. The marshmallow is more of a subtle sweetness. The chocolate hangs around throughout, but some slight toffee and a bit of alcohol come through.
Mouth feel is smooth and nice. Not as heavy as I thought.
Overall, a very unique and interesting stout. Worth a try for sure as it is well done.

12oz bottle. Poured into a Sump snifter 5/19/2014.

A- as expected, dark brown & nearly black body. Nice half finger off white head, minimal retention, no lacing.

S- graham crackers, marshmallows, burnt malt. Some roast and dark chocolate. Pretty interesting nose actually.

F- graham crackers at the forefront, raw vanilla bean, some marshmallow character but not a ton. Bitter charred malt with some roastiness, dark chocolates. The marshmallow and graham cracker sweetness gets a nice balance with the vanilla bean and burnt/charred malt.

M- medium bodied, lower in carbonation. Slick and resinous as expected. Burnt malt finish tempered with a bit of vanilla.

O- not as vanilla forward as expected but a wonderfully balanced and nicely done stout that's heavy on the graham crackers.

Poured from a 12 ounce glass into a teku. This was bottled around March 2014 so has around a half year of age on it.

Appearance: Pours black with a fizzy tan head of a couple fingers which fades at a medium pace, before leaving a little tan fuzz atop the black beer. (4.25)

Smell: Mmm. Chocolate, vanilla, marshmallows, graham cracker (yep, I actually smell that), a bit of caramel, toasted malts. Pretty fantastic, well blended aroma. (4.75)

Taste: Follows the nose pretty well. That graham crackery/malt flavor, vanilla, cocoa, molasses, marshmallow, roasty malts. Not overly sweet at all though, a nice balance of the roasty, bitter malts and the sweet flavors. (4.5)

Mouth-feel: Low to medium carbonation with a medium to full, slightly sticky body. Fits the flavors well. Finishes smooth. (4.5)

Overall: This beer definitely delivered on being a s'more stout. Especially that sweet nose. Very well balanced, and really drinkable. Really nice, full body as well. (4.5)

Dark brown that results in a moderate dark stout. Just a half inch of head forms and quickly settles to a thin film. Just a little spotty lacing is left down the glass. Not very impressive to look at compared to other big stouts. Aroma is pretty standard with a bit of booze letting the drinker to brace themselves. Notes of roasted malt, turbinado sugar, smoke, and vanilla. Interesting flavor in that the marshmallow fluff comes through strong. Does not really taste like a smore because I am having trouble picking out the chocolate and graham cracker aspect. A bit of campfire character to it as well. Quite a bit of alcohol flavor and burn in the finish. Big body and nice carbonation but the booziness character makes the body feel thinner than it actually is which lowers the score. A good stout with interesting flavor but it is not worth $5 a bottle. Might keep one around and let it age to see how it mellows out in a year or two.

12oz bottle poured into a snifter

A- pours a pitch black color with a thin fizzy dark tan head that diastase quickly, leaving nothing behind

S- lots of chocolate and cocoa powder on the nose up front, complimented by a sweetness of vanilla and marshmallow cream. Roasted malt and licorice undertones

T- sweet dark chocolate and cocoa powder up front, with some slightly charred roasted malt. The vanilla adds more of a sweetness as it warms. Roasted finish with a hint of coffee & dark fruit

M- medium body with low carbonation leads to a slightly foamy mouthfeel and a slightly thin finish

O- a sweet stout that drinks pretty easily, given the abv. Didn't really get as much of the 'smores' aspect as I was expecting.

Pours charcoal black with barely any foam or lacing. Smells like a toasty stout with marshmallows in it. Flavor is marshmallow cocoa puffs. Mouthfeel is silky smooth fudge cotton candy. A decadent, great beer.

12 oz bottle. Near black pour with thin tan head that fades quickly with minimal lace. Powerful chocolate coffee aroma. Sweet tasting imperial stout with chocolate dominating, mild vanilla marshmellow and spice around the edges. Just enough bitterness in a fairly dry finish. Mouthfeel is thin but semi slick. On the sweet side for an imperial stout, alcohol very well hidden, tasty brew.

Pours jet black with a thinner deep beige head atop.Light vanilla notes on the nose along with cocoa powder and roast.I don't get as much of the smores aspect flavor-wise as many others,deep dark roasted notes along with vanilla and dark chocolate,it's quite roasted and dryer than expected.It gets a little boozy and sweeter as it warms,not bad but not quite what I was expecting really.

This beer is just not as advertised. A very good imperial stout but not enough marshmallow and chocolate flavor to be considered a smores beer. Kind of disappointed, especially at that price point.

This beer smells incredible. It also delivers on its name. It tastes like a s'more in a beer. Taste is dark and sweet chocolate, some Bosco, marshmellow, vanilla, and light cracker. Did not like some of the Bosco syrup taste, but overall this was a really good beer. It added something new to the RIS concept and still stayed true to the style. Worth seeking out.
