A staff favorite is back and we're not talking the Yuzu version. FIERCE gets its mean streak from a 100% kettle acidification. This beer is 50% pilsner malt and 50% wheat and brewed like every other beer up until we fill the kettle. At that point we cool the wort down to a balmy 50 dC and pitch our in-house lactobacillus culture straight into the kettle. Then we gas the tank with carbon dioxide to make sure no other microbes get in there and then we go home. We usually come back the next day and try it, but then often go home again (it's good we don't live too far from the brewery). Then after about 14 hours the souring is complete and we bring the soured wort to a boil and throw whatever hops we are trying to get rid of (the brewsheet literally say "Tettnang or whatever"). Then to just mix things up a bit, we pitch a saison yeast and let the fermentation free rise and it get up to around 32 dC (we use metric so you can't clone our recipes). The resulting beer is sour with a slight fruity note from fermentation that give it a slight sweet tart flavor.

Semi-opaque pale yellow hue.
HUGE white head (careful pouring!); minimal lace.
Wheat & mild lemon nose.
Thin mouthfeel.
Honey, graham cracker & mild lemon flavors up front; a cider-y dry finish. Sour lemon notes emerge more as this warms.
Quaffable but with nice flavor.

Not a style I know much about or ever drink, but I really enjoyed this. Very crisp and refreshing. A hint of sour and funk with a bubbly mouthfeel.
Step away from your DIPAs and BA stouts and give this one a try. Off Color does subtle so very well.

12oz bottle that is a full year old
Very light on... almost everything. Thin mouthfeel with a lot of carbonation and a zip of lemon at the end. Lots of wheat and yeast taste in there for 4%. Citrus, grain, and spring water
Better with age, I vote we replace La Croix with this stuff

12oz bottle, enjoy by 24 Jul 18. Cloudy and pale straw colored ale with a bubbly white head that fades to a foam. Aroma is lemongrass, bread yeast, and wheat. Flavors are tart and sour with notes of lemon, wheat, yeast, and sour white grape. Light body, lively carbonation, finishing tart and sour. This was interesting for me. A lot going on and I can't say it truly worked for me.

Overall: Tart, sour and tasty! This one is really done well and you can put down plenty of these at ease.
