Having had the opportunity to plow through a handful of different Kölsch on tap, and on location near Cologne earlier this year the bottled version of Dom gave me a very positive surprise. The bottle was tapped in the end of May so it was not a simple matter of freshness. When I opened it, it poured with a cascade of bubbles (no pun intended, it is made with Saß hops) and with a nice yellow color. It had that kind of coarse foam so typical of Kölsch and smelled of hoppy herbs and citrus. The taste was surprisingly well developed mith a multitude of fruits and herbs tumbling around in my mouth. It was sweet and citirc with strong bread notes as well. It tops my Kölsch list now.

A very smooth beer, I had a 0,5 L glass in Aachen, Germany. It was very refreshing and not overly spiced or hopped.

“Dom Kölsch”
,5L brown glass bottle coded “Mindestens haltbar bis Ende: 06.22 L1609 G1 0749”
€1,29 @ REWE CITY, Hohne Str. 30a, Köln, DE
Look: Clear golden body beneath a full head of white foam that holds well and leaves some very nice lacing behind.
Smell: Grainy and bready malt with a pleasant fruitiness and soft herbal hops.
Taste: Lightly sweetish grainy malt with bruised apples and floral and softly herbal hops notes. Firmly bitter with a dry finish.
Feel: Medium bodied and crisp with a fine-bubbled, seemingly natural carbonation.
Overall: One of the better, more refined and balanced Kölsch beers in my opinion. Very well done and well worth trying.

Probably first had in June 2006, in Köln, Germany, on draft, and had again today at Phantasialand, Brühl, Germany, "vom Fass" into 0.3l clear plastic beer cup.
Maltier than usual for a Kölsch.

500ml brown glass bottle purchased at a kiosk in Koln, Germany. The best before date is 09.16, which is odd seeing as I bought it today (March 21st, 2016) - and German Kolsch breweries usually emphasize freshness even more than American breweries do with IPAs. Red and gold label design. Branded red and gold pry-off crown cap. Notes below are regrettably brief given a less than ideal review environment:
A: ~5cm wide head of white colour. Not as frothy or robust as most Kolsch heads, but certainly above average within the style (especially when comparing to inferior American attempts at the style). Retention is above average - ~3-4 minutes. Leaves no lacing as it recedes.
Body is a clear yellow-copper of average vibrance. Clean; no yeast floats within.
Appears well-carbonated.
I notice no unique or special characteristics, and the appearance is inferior to most Koln-brewed Kolschbiere, but it's generally appealing.
Sm: Muted and reticent, suggesting a shallow simple brew. Generic malted barley, a bit of sweeter Munich malt, maybe some pilsner malt. No graininess here, but it does hint a bit at corn sugar. Slightly syrupy judging by the aroma.
I find no overt hop profile. There are no obvious off-notes, but this is already seeming like a middle-of-the-road Kolsch at best.
T: Okay...it's decently balanced, but the subtle hop profile usually observed in the best Kolschbiere is absent here. There's some Munich malt sweetness, some crisper pilsner malt, and a hint of corn syrup-like syrupy sweetness, but I wouldn't go so far as to suggest adjunct was actually utilized. It's an unremarkable build for a Kolsch, and doesn't drink horribly fresh.
Mf: Smooth, slightly syrupy, wet, unrefreshing, medium-bodied...this isn't the crisp, refreshing-as-hell, light-bodied mouthfeel you'd hope for in a great Kolsch. Lackluster, overcarbonated, and not at all ideal for the style or flavour profile.
O: A mediocre expression of the style, and really disappointing considered it's brewed right here in Koln, the home of the style. I've had worse Kolschbiere with the official Kolsch appellation (see Richmodis), but this is quite poor nevertheless - even less appealing and drinkable than, say, Zunft Kolsch. That said, I'm sure it's better fresh on-draught.
High D+ (2.49) / NOT RECOMMENDED

On tap at the Stapelhaus.
Presented by a very cheerful chap in .2L glasses, brewery branded. Lovely clear yeller, minimal carbonation. Nose was faint hay, grass, weakest part of a pleasant experience.
Döm kolsch; ain't no kolsch like this in America. Clean, lighly fruity, slight sweet malt, mild sugary grass. Effervescent, and silly easy to sip. We had three in short order, and I can see drinking this in the square all day long.
Good, solid beer that did me the favor of changing my outlook on a style. Fresh kolsch? Happy to have another.
