As with most Belgian beers, the appearance of McChouffe is very fine: rocky, meringue head with exceptional resilience, reddish-brown body with all sorts of yeasties floating about. Aroma is slightly musty and very sweet - candy, caramel - which matches its taste, which is sharp and peppery around the edges, with a massive jolt of malty sweetness in the middle, and the two slug it out even after you swallow, with, finally, I think, the sweetness winning out.
Brisk but also creamy and smooth, like a carbonated milkshake.
Yet, in the end, there is an odd hollowness to this beer, as if it could use a bit more body, a bit more depth.
Overall, a wonderful beer, certainly one that I would buy again. Pleased to be able to drink it in a McChouffe logo tulip - one I had bought years ago but had never gotten around to filling with its namesake.
