This is a fine IPA with Belg written all over it. It does not have the maltiness of an American IPA or a British for that matter but has the light effervecent feel of a belgian. Classic in that you don't realize the alcohol is 9%. But the taste is clean. Yeast, malt, hops, and alcohol are all balanced to present itself as a wholy different packge. This is brewing subtlty. It is like recognizing a police sobriety block and slipping into your jail cell and then waking up at the ritz

Poured from a 750ml (25oz) bottle (Best By Date: 04/2016...assumed to be bottled in 04/2014, so about 3 months old) into a 16oz 'Brasserie D'Achouffe' branded tulip glass.

A- Pours a hazy, golden yellow with a 1+ finger worth of a white, soapy head with amazing retention. Even after the first sip (and a non-nucleated glass), the head maintains at a healthy, 1+ finger with steady streams of carbonation eminiating from the sides of the glass...exquisite. (4.5)

S- Known for its spicy and fruity esters, I'm not sure how much of the Chouffe yeast strain is contributing to the aroma. However the nose is chock full of lemongrass, spice, grapefruit and passionfruit. A bit of a breadiness is detected once the head subsides a bit (quite a few minutes after pouring), yet dominates the aroma for the duration of the glass. (4.0)

T- This is where things get interesting...the palate is met with a huge slap of hops: tropical fruits (passionfruit, honeydew melon, pineapple), citrus (lemon/lime, grapefruit) and subtle coriander-like spice all contribute to a wonderful flavor profile. Despite the stated ABV at an elevated 9.0%, the alcohol is well hidden and goes undetected. (4.75)

M- Houblon Chouffe falls on the lighter side of medium. The significant carbonation helps to create a light and 'bouncy' mouthfeel while allowing the hop bitterness (of which is quite substantial) to dance on the palate. The finish is absolutely dry increasing its drinkability. (4.5)

O- The team at Brasserie D'Achouffe have themselves a winner in Houblon Choffe IPA Tripel. If assured of getting this as fresh as this bottle (purchased at Brewery Ommegang in Cooperstown, NY), this would be a staple. As such, I will check for bottling dates (Best By of which I think is two years) and will be certain to purchase within (3) months of it being bottled. Another feather in the cap for the Belgians using Pacific Northwest hops to brew a lofty beer! (4.5)

This one pours a perfect cloudy golden color that has a richness of whitening from within the golden color. The head is thick and white and settles slowly leaving great lacing down the glass.

The nose is Rich malt with spice, citrus, apples, camphor, pine, grass and bread all in the mix. The nose is exquisite.

The taste is sharp and crisp with a nice effervescent experience that coats the palate is bliss. There are notes of fruit and malt subdued by crisp spiced hops that have a pleasant bitter bite and a nice clean finish with hints of apples, citrus, lemon, pine, grass, earthy notes and bready undertones with a nice alcohol warmth to it.

The mouthful is elegant and just right.

Overall a fabulous beer and one to be savored and enjoined. Extremely drinkable and wonderfully complex. I highly recommend this as one you absolutely must try.

Excellent beer served draft in a tulip glass. Perfect lines after every sip. Nice frothy head on the beer. Appearance has golden wheat tint to it. Sweet floral hoppiness come at you. A little hint of honey in their as well. Smooth sweetness with a sight bitterness that is perfectly paired. Very smooth going down. Genuinely a delicious beer. Seasoned tripel and ipa drinkers will enjoy as well as a newbie.
