Bridge 750ml poured into a DFH laser-etched goblet:
A - Cloudy amber with a creamy white head that dissipates quickly. Little lacing left at the end with fat bubbles clinging to the side of the glass.
S - Mmmm, zesty hop character with citrus, pine, and floral aromas quickly taking over the senses. Slight bubble-gum and candy aroma also present with caramel, apples, and starfruit. Bready malt and some wheat seem present beneath, but the hop aromas definitely win out.
T - Spicy, fruity taste with a moderate bitterness that seizes the palate after some time. The spices linger throughout the dry finish with apples, currants, and clove lingering for quite some time. The bubble-gum flavor is also quite noticeable, possibly the result of the yeast-hop interaction? Citrusy hop flavors are also there, with piney pineapple and tropical fruits subtleties giving the beer plenty of character. A real winner here, possibly the most unique and balanced expression in the Bridges I've tried so far.
M - Explosive carbonation that really coats the tongue, but it doens't linger and has a very clean finish with a bitter backbone that doesn't take over and allows the subtle spice and hop characters of the beer to continue the story.
O - An excellent brew! Plenty of character and very well balanced. There's plenty of complexity but its light enough to go down pretty easy. Too bad this is a one-off brew. I'd advocate for more regular production of this puppy.
