Saison du Blé is the harmony of a fluffy Wheat Saison and a tart, Missouri Saison. The wheat balances a very dry body with a creamy, billowy mouthfeel, and our local microflora adds complexity and acidity. This Saison was aged in oak for several months before being naturally conditioned in this bottle

Appearance - The beer was golden yellow with visible bubbles and fluffy white head.

Smell - Citrusy nose with a standard saison funk.

Taste - Initially, the beer had a big lemon profile. There was a steady wheat backbone. There was a light herbal quality with the lemon. The beer had a dry funky finish.

Mouthfeel - High carbonation brushed away the sweeter elements. The funk stuck to the roof of the mouth.

Overall - The beer hits all of the marks for a saison.

Pours a cloudy golden color. Thick, frothy white head forms on the beer before dissipating pretty quickly and completely. Beer remains effervescent throughout. Aroma has notes of lemon, lemon zest, some grain, spicy peppery notes, wet hay and wheat, and some light oaky notes.

Taste follows the nose with notes of lemon zest, lemon, coriander, wheat, white wine, green grape and some oaky, wood notes. Feel is light to medium bodied, moderately carbonated. very dry on the finish.

Overall another world class saison from Side Project.

Had this beer at the SP Cellar from tap poured into a fluted glass. Slightly hazy bright yellow color with good head and curtain lacing. Smell and taste of coriander and orange. Some lemon and a bit of lime. Nice tart taste with sweet fruit, like a nice ripe pear, finish. Very nice saison!

Blend #8, 750 ml bottle, poured into a tulip at ~40 degrees F and sipped slowly to allow warming.

L: Pours a hazy and nigh opaque spring clover honey gold, and forms a few fingers of white head with okay retention.

S: Lemon zest, coriander orange, and something vaguely reminiscent of sea air.

T: Lemon zest and coriander orange abound in the palate, alongside something acetic not unlike a white wine vinegar. White and green fresh-cracked peppercorns, a hint of unripe Bartlett pear as it moves along. A tinge of musty, damp hay as it finishes, with the vinegar and something not unlike how the smell of treated lumber sawdust has me imagine it would taste (were I ever interested in ingesting that level of arsenic, ha).

F: Light and quite lively for an aged sour, goes down far too easily.

O: This is a fantastic saison, and makes me ponder if perhaps one of the reasons for the location of Cahokia may have been the local microflora for tasty fermented beverages.
