Bottle to HF glass

A: Hazy opaque golden color. 2 finger fluffy white head recedes to nothing very quickly.

S: Lactic funk, maybe some stone fruits. Not terribly aromatic to my nose.

T: Lactic lemony funk. Definitely some wine barrel in the finish.

M: Medium body, but lacking in carbonation IMO.

O: Not a bad beer by any stretch, but I prefer my funky saisons with a little more carb, and a dryness and tartness this doesn't have. Lacto pretty much dominates and is rather one dimensional.

pours a slightly golden straw yellow with some effervescent head, quickly fades.

tart apple and lemon, ripe fresh oak. white grape.

similar to nose with more of a funk and cheese. lots of gueuze characteristics up front and some sweet malt and bread in the finish.

moderate carbonation and some slight dryness

pretty astonishing overall, should age quite well but amazing fresh. has Cantillon characteristics and for good reason, below is what Cory said about this one

"This is the renamed Brett Project #1, so 100% brett from Cantillon fermented, but I added lactobacillus to the Chambourcin barrel it was being aged in. The result is similar to the lively characteristics of Brett Project #1, but with more acidity. Sat in oak for 6 months. 6%"

750 mL bottle poured into a snifter.

Appearance - Hazy yellow orange body. Diminishes to nothing.

Smell - Less winey than the Saison de Ble. Wine barrel. Oak. Not overtly bretty. Lemony and oaky.

Taste - Sharp lemon tartness up front. Grainy wheat. Oaky and a little bit of wine. Lingering tartness.

Mouthfeel - Medium low carbonation. Pleasantly tart.

Overall - Very similar to the Saison de Ble. This is less wine-forward, though.
