750ml bottle poured into a Hill Farmstead stemmed glass 6/29/2014.
A- Dark reddish-amber body, with a effervescent, frothy three finger white head that leaves silky thick lacing all over the glass as it slowly recedes. In normal lighting, this is a fairly ugly, dark reddish beer, but then again it is what I expected it to look.
S- Cheesy funk with some oak barrel presence really jumps out at first. A bit of freshly squeezed grapefruit, cherries along with tannins and peppercorns, a bit of musty hay. Very complex and nothing like anything I've smelled before.
F- There is a fairly strong grapefruit juice punch in the beginning that transitions to peppercorns that dance on the tongue, complemented by tart cherries, leather and cheesy funk; that eventually gives way to a dry, red wine tannic finish not unlike a good Cabernet Sauvignon. Again, fairly unique and like nothing else I've tried before. I think the grapefruit dry-hopped character is a bit lost in the complexity of the beer, and even clashes a bit with the tannic finish.
M- Medium in body, bubbly and effervescent with a bit more carbonation than I'd expect from a wine barrel aged saison. Regardless, this is a fairly tart saison with a lot of complexity, but some of the American-style dry hop character seems to clash a bit with the red wine tannins on the back-end. I'm not sure that I'd ever want to mix grapefruit juice with a Cabernet, if that makes sense.
O- Fascinating take on a red saison. I thoroughly enjoy the wine barrel character as it comes across very well on the finish, but with more interesting complexities than a regular Cabernet. Still, the freshly squeezed grapefruit character from the dry-hopping seems to make this an oddity, slightly clashing a bit with the red wine character.
