Notes/Commercial Description:
Red Saison that was fermented in red wine barrels and was 100% fermented with our house Brettanomyces strain. Aged 5 months and then dry-hopped before bottling with Mosaic, Citra and Simcoe hops.

Poured from a bottle into a Bourbon Barrel Temptress snifter.

Appearance: Crimson at the base, fading to a rusty brown toward the top. A one-finger thick, creamy eggshell head fades into a thick creamy crown that persists forever.

Smell: Loads of funky, farmhouse brett with a prominent floral, citrus backing. Mildly sour smelling from the brett, a vinous character comes through too.

Taste: God damn that's complex. The first flavor to hit my palate is bitter hops and funky brett, sour grapes come next, with a hint of vinegar tartness. The other flavors fade away to leave behind a thick fig and molasses note on the finish. That's incredible.

Mouthfeel: Moderate to high carbonation that fades quickly. Medium body, and the beer lingers in the mouth quite a while afterward.

Overall: This is one heck of a unique beer. Never had anything like it before, and likely won't have anything like it again. The combination of flavors is just so unique, the appearance so gorgeous, and the smell so special, Side Project has knocked it out of the park, again. Can't wait to try their other offerings!

Reviewed from notes. 750ml bottle shared by that special someone - thanks. Batch 1.

A: Pours a hazed orangish red with a thin white head and leaves splotchy lace.

N: Big bretty funk with some cheese, some wood, fruity.

T: Fruity, vinous, barnyard, earthy, a bit of rot in a good way.

M: Moderate body and medium carbonation. Finishes fruity, tart, with some dryness.

O: This is quite good - very good. Well done.

A- Pours a dark amber with reddish hues. A medium sized off white head recedes to a collar and leaves good lacing.

S- The aroma is super funky! Lots of oak and brett, some slight cherry tartness, wet moss, somewhat cheesy. There's some obvious lacto elements, and even a magic marker kina smell. Weird but awesome!

T- The taste follows the nose very closely. A ton of wood tannins and brett/lacto funk. Mossy, mildly tart, some cherry undertones, and some swiss and gouda cheese flavors. Super complex, delicate, and very tasty!

M- The mouth feel is medium, lightly carbonated, And super smooth. A bit drying.

O- This is an awesomely complex beer that's better than the sum of its parts!
