Bière du Pays is inspired by the classic Saisons from the country. An airy and fluffy malt bill is fermented with wild Missouri yeast and bacteria and our house Saison blend. This refreshing and delicate farmhouse ale was aged in Missouri oak for several months before it was naturally conditioned in this bottle.

Had on tap. Somehow hadn't tried this one yet. Murky orange body, thin white cap. Smell and taste are much the same, centered on bright oak providing a stage for big stone fruit, orange, and lemon to sing, with floral and yeast tones in the background. On draft this was delicious, sort of the ideal-type Missouri saison now in my mind. A mild tartness, white grapes, oak, lemon zest, light yeasty malt, and a bit of barnyard funk. Tastes almost as much like a white wine as a beer. Crisp, refined, and quite quaffable.

Hazy yellow, ton of foam.
Bread, yeast, sorta fruity.
Lemon and vinegar, can't tell the hops, needs another note.
Soft, needs some bite. Not at all jarring unpleasant, though.

Purchased this bottle at the Side Project Cellar . Poured into a tulip glass. Bright clear yellow color with a nice effervescent white head, good curtain lacing. Fresh, fruity, floral smell. Tart white wine flavors, lemon, sweet herbs. Crisp clean feel. Excellent beer for Easter!

750 ml bottle, B3, drank out of a Hill Farmstead oversized wine glass.
Beautiful beer out of the bottle, hay color with an inch of head that settled down to nothing. Vinous acidity on the nose, same for the taste. Very wine barrel influenced. Nice to drink with dinner. While I wanted to sip it and make it last, I found myself taking larger gulps for some reason, even though I found the wine barrel a tad dominant for my uber refined beer palate...(!). This one definitely found its comfort zone about 45 minutes out of the refrigerator. Really enjoyed it.
