Formerly Dos Cabezas Double IPA

This batch is pretty awesome. Citra, Galaxy, Centennial, Columbus, Chinook, and Cascade whole cone all come together for hoppy 8.4% ABV bliss.

This is a pretty fantastic DIPA with a great mix of hops that creates an outstanding flavor with a smooth feel. I typically can’t drink multiple DIPAs in one night, but this one is just too good. AZ Wilderness has yet to disappoint!

It poured a hazy golden hue with just little translucence with a thick foamy white head at the top. The smell is resinous with notes of grapefruit and melon.

The taste is incredible....it’s impressively bitter! Picking up butter resin and grapefruit rind without the hop burn in the back. Still the juicy component comes through, lending tropical fruits and some sweetness.

Mouthfeel is medium bodied, perfect carbonation.

Overall an exceptional brew. I long for hoppy bitter beers that seems to be harder to find amidst the NEIPA craze. This has both ends of the spectrum, very earth bitterness and a juicy sweetness.

This is a 7 month old can. I have no input regarding how it is fresh, but I think thid may be insightful, so here we go.

Kept just above freezing its entire life. Poured into a Spiegelau at fridge temp.

Pours a fairly clear pale golden yellow hue, quickly becoming entirely turbid past the second half of the can. Two large fingers of eggshell white head form - dense, leaving behind a giant collar and wall of lacing. Some small chunks of sediment sink to the bottom.

Nose: The aroma has that sort of "old school NEIPA" kind of vibe - pale malt, a touch bready, a touch grainy and gritty, with a hint of honey and toast, and while it has that late/dry hop element, it's much more herbal, grassy, resinous, and pithy, with a hint of peach between some blood orange, grapefruit rind, papaya, and straight up hop cone. A hint of allium emerges. Simple and saturated. 3.75

Palate: DC Mountain greets the palate with a restrained pale malt base. Similarly, a touch bready, a touch grainy, and just a touch of that background toast. Restrained sweetness. There's an underlying hop acidity - not burn, but a punchy bite that lends a pineapple-like tang. That Galaxy is still cutting through, with that signature overipe peachy stone fruit quality and grassy bite, and there's definitely some Citra-driven mango, but everything in between is just a web of hoppy herbal, grassy, leafy, floral, and spicy, coming to a peak with grapefruit and resin. The hop combination is stellar, finding a sweet spot between new age fruity and old school resinous. The finish is intensely floral, like many respected IPAs of yesteryear, before some allium, grass, and spicy resin linger into the finish with a gentle but clingy bite.

Mouthfeel/Body: This one is classic DIPA territory. Not plush, not creamy, not milky - just wholesome, fluid, and right between that easy drinking crispness and malt weight that reminds you it isn't a small beer. Effervescence i2a right down the middle - fine, fairly lively, and doing its job. No stickiness, no lingering sweetness, just a slight oily cling.

Overall: Its almost not even fair of me to rate a 7 month old can, and to be fair - I didn't start to. It wasn't until a tried this and realised it deserves one. How different is this fresh? I can't say. The other reviews don't seem far off from mine, so I'm assuming not much has changed. At this age, this just drinks like a classic NEIPA when the style was juuuuust starting to come to our attention. There's malt, bitterness, classic PNW hop notes, and something about it just feels a touch old school. Whatever it is, this is a beautiful IPA. Even in its elderly months.

Crowler thanks to Keith. Golden body, mild haze, capped with a small white head. Tropical citrus mild hop sin aroma, mirrored in taste. Hops come in at the back for a mild bitter finish. Juicy throughout.

A: Hazy gold with rich white foam and very sticky lacing.
N: Hops, citrus, and floral notes.
T: Follows the nose, very hoppy bite with a crest of citrus and soft sweetness from floral undertones.

O: Very easy to drink DIPA, amazing flavors and clean with minor bite for 8.2ABV

I have had the DC Mountain at Wilderness several times. It has consistently been one of my favorites. Pours with a thick creamy head and a beautiful unfiltered yellowish color. Great mouth feel with no bitter aftertaste. As with all good Doubles I have tried, it is good slightly warmed in your hands before the first sip and as it warms a bit more it is good to the last drop leaving wanting more.
