Poured a bright golden color, with a decent cap of bubbly off-white foam. Aromas of floral hops, somewhat grassy, bubblegum and biscuit. On the palate, this one was light to medium bodied, with flavors of good hops, as well as some pears, peaches and biscuit malt.

My first beer from O'fallon, poured into a standard pint glass clear lighter amber color with a thinner but well sustained white head.Aromas are a little mild but pleasent, some citric hop mainly with a touch of biscuit sweetness.Flavors were a little mild as well, there is some nice citric/herbal hop flavors but they end a bit abruptly, quite a hefty caramel base is there as well.Pretty basic
American IPA there although a little subdued in character in my opinion.

12oz bottle picked up on a recent trip to St. Louis. Pours into my glass an amber/orange hue with a hefty inch of creamy white head on top that leaves a bit of lacing on the way down. Aromas begin with lightly toasted, caramelized biscuit malt along with a nice punch of hops. Floral, herbal and lightly citrusy. Nice.

First sip brings a mellow caramel malt upfront that has a biscuit quality to it as well. Floral hop flavors move in that have a nice herbal/citric edge as well. Flows down with a nice bitterness, but the beer gets a bit astringent in the end as well.

Mouthfeel is medium bodied with lots of fast moving carbonation. It kinda gets to be a bit too much, but I could still sit down to a few. Overall, not a bad IPA, but it doesn't really grab me. I'll stick to the Smoked Porter and get my IPA fill elsewhere.

12 oz bottle pours a hazed amber body with a tall offwhite head. Excellent retention eventually gives way to lots of sticky lacing. Aroma is all hops, with grapefruit, pine, and grass Body is medium, well carbonated with a hops bite. Taste has an assertive hops bitterness that is grassy and citrus rind in nature. There is also a pine edge. Malt presence is understated, serving up just enough caramel sweetness to offer some balance. Finishes dry and bitter, an excellent American IPA. Very well crafted.

The beer pours an orange color with a white head. The aroma is heavy on the flowers and biscuit malt. The flavor is more of the same. The hops deliver some bitter floral and pine notes, as well as some orange citrus and some biscuit malt. The bitterness level is about medium. Medium mouthfeel and medium carbonation.

A: A golden amber with a foamy head, that leaves a solid ring after about 20 minutes of waiting, and is producing the most lacing out of the last five beers I've had.

S: Smells of hops, and bitterness.

T: The bitterness doesn't carry as much weight as the smell would leave you to believe. Almost a sweet aftertaste.

M: Fairly full for an IPA, and not too much carbonation.

D: I'd rate this higher if it was slightly more available in my area... but the beer itself was one of the better ones I've had in a while.

Overall, good IPA. I'd highly suggest it.

Cheers.

Reviewed from notes. Consumed 8/7/09

Poured from a 12oz bottle into a standard water glass. Firm pour calls fourth a solid one inch of off white head. Head exhibits brilliant staying power. Color is a cloudy deep golden orange.

Nose- Wonderful, orange citrus, tangerine, orange rind.

Palate- Very tasty. Orange and grapefruit rind. Some pleasant biscuit malts. Long bitter finish. Reminds me of a dogfish head 90 min only a little better.

Mouthfeel- Active, dry

Drinkability- Fantastic, wish I had more then one.

Poured from a bottle into a pint glass.
Cloudy with a moderate head. Very cloudy with a burnt orange hue.
Smell adds to the experience right out of the gate. Floral hops heighten the expectation.
A very nice balanced creamy hoppy without the overpowering hops at the end that so often takes away from some IPAs. The right amount of hops while still offering a depth of character.
One of my favorite beers from O'Fallon.

Kind of a murkiness to this one, a little dark between orange and brown. Aroma is heavy on the wood, not a eminent hop presence.

Taste, a heavier ipa but without a hop assault. Balanced I guess, if that's what you're into in an ipa, a big malt presence to accompany some hops. Had a flow like cream ale, smooth. Some of the bitterness pops up downbottle, so that was an unexpected range to find in this beer. Cost seems relatively reasonable, which is pretty much a good summation of the entire experience with this beer.

Medium amber color with a two finger thick and frothy light tan head. Plenty of lacing.

Aromas of caramel, herbal hops and black pepper.

Big hops from start to finish. Tastes of pine, pepper, herbs and some malts that nip at the hops trying to balance it out, but the hops win big time. Great IPA.

Bold and fresh, a big mouthfull, I feel like I just climed an alpine mountain.

Appears a hazy orange, with a creamy white head and decent lacing. Smells of oranges and grapefruit, a little pine. A good deal of hops, but a nice malt back bone to support it, well balanced all the way through, after taste is nice as well, leaves apple taste lingering. Mouthfeel is right for an IPA, maybe a tad too much carbonation, This probably won't be my last 5-day, It doesn't quite blow me away like Furious did, but still a very fine beer from O'Fallon, nice job.

(Served in an American pint glass)

A- This beer pours a warm amber brown body that is a bit dense with a strong carbonation of big bubbles. There is a thick creamy light tan head that last the full glass and leaves rings with each sip.

S- The smell of light toasted raw grain and green herbal hops are soft but balanced.

T- This beer has a soft hoppy flavor with a hint of juicy fruit gum followed by a light dry toasted malt flavor. There is a light bitter green hop note in the finish with a soft fruit punch note and a dry big coriander flavor. As it warms there is a note of orange rind in the hop flavors.

M- This beer has a medium-full mouthfeel with a creamy texture from the mouthfeel

D- This beer has some nice flavors but they are a bit soft especially for being aged on hops for 5 days.

12oz. brown bottle, purchased at Party Source, poured into a pint. No dating.

A: Pours a nice sunset amber with decent visibility. Maybe 1 finger worth of off white head forms and has some retention. Some patchy lacing throughout.

S: Floral and citrusy. A bit more orange than normal. Sweet malt notes in the back.

T/M: Bitterness is way too controlled. Nearly APA status. More of the floral hops with enough citrus makes up the first half, while a lightly sweet and clean malt brings up the rear. Finish is very lightly dry with nearly no bitterness, again. Body is moderate as well as the carbonation.

D: If they would have called this an APA, I think I would have given better marks. However, it lacks in the area that IPA's shine.. HOPS! This would make a great sessioning APA, though... And at $9 a 12pack, you can't beat that.

Reviews for this one are all over the place. Here's my take on it, if you care.

The color is a deep amber gold verging on an amber-orange with a bit of haze to it. A nice fluffy head formed at a few fingers, stuck around for the entire time, and left lots of patchy lacing. Activity is lively the whole way through.
A nice citrus hops note is most evident with an earthy light pine resin hops note as well. Sturdy and pleasant, this is very much the standard for an IPA. It's not overly complex, and there's not a huge load of hops that blows this one up. There is, however, a nice caramel malt balance to a good hops bouquet.
The taste follows suit exactly, an earthy presence coming through underneath and the caramel malt never fading to balance prominent citrus and pine hops flavors. The finish is strong.
A good mix of crisp and smooth with a medium body and the right amount of carbonation round out a pleasant drinking experience.
This one's quite drinkable with plenty of character. I'd say it's deserving of whatever small-time award it's won.

Golden hued sporting a fluffy bone-colored head.
Nose of sprucey, resinous hops exclusively, and not at the volume to make this remarkable.
Enters the mouth with a caramelized grain notion that meanders toward honey and apple. It turns a bit disjointed and burnt just prior to the hop hit. They hammer in ganjafied resin, and pine cones, and grapefruit peelings, and flower petals. Gin-like alcohol vapors take their place on the close, and provide further bitterness. It comes across as fairly boozey despite its mild level of strength.
It carries a sticky yet oily medium body that befits the style with a lowly carbonation level.
In some ways, this does everything it should to be a standout IPA. But it's not. While no specific flaw stands out, taste-wise, it just doesn't ultimately cohere and thus it sticks in the middle of the road.

A - Hazy marigold orange brew with a massive three finger orange-rind colored head that gets rocky as it recedes to a nice tight cap. A whole bunch of sticky gold lace is left on the glass, and a swirl easily brings back a full two fingers. A whole bunch of yeasty chunks are floating around in there too! A damn fine looking brew!

S - Mandarin orange hops hit the nose right off the bat. Sweet and sour sauce....like General Tso's Chicken or that Sweet and Sour Orange Chicken stuff at Chinese restaurants. Sort of one dimensional though...mainly just sweet mandarin orange juice supported by a thin malt backdrop.

T - Sweet mandarin orange all over the place, followed by some pine sap nuances in the finish. Some really nice mineral qualities add some complexity, and it's much more malty that the nose suggests. This is damn good stuff.

M - Medium bodied and greasy with hop oils. The slightly dry finish leaves a lingering hop residue that is hop-head paradise. I like it!

D - An outstanding IPA. Lots of really nice hop flavors and a not-overly-dry finish, when combined with that great mouthfeel add up to a really drinkable IPA.

The 5 Day is OK....pardon the rhyme. The beer poured a orange clear with thin white head that is no leaving a lace. The scent is a blend of malt and slight citrus hop. The Taste is a balance of malt with slight pine and citrus hops that finishes a little bitter. The mouthfeel is medium in body with good carbonation. Overall the beer is ok. I wouldnt go out of my way to get it.

This is a fantastic IPA!! this brewery is only a cpule mile from my home and I was blown away by this midwest IPA. It pours with a wonderful thick head and orage/copper color. The nose is where it really impresses. An awesome pine and citrus hop cloud with underlying malt pinning.

The taste was a wonderful balance of strong hops and malts. Citrus grapefruit and pine with a good malt and biscuit flavor without being sweet.

The body is firm but not thick, coating the tongue and leaving flavor all the way down. This is just an amazingly drinkable beer, which has become my regular social drinking beer. As a friend said, this is the kind of beer I would brew for myself (which I am planning to do with my nest brew session).

Get your hands on this beer.
