A: Served a lightly opaque glowing apricot color with a thin soft white head that faded into a fuzzy collar. Streaky lace was left down the glass.
S: Notes of coriander are easily noticeable and remind me of dried apricot (smell some dried coriander and you'll see what I'm talking about). Chamomile is light, flowery, but noticeable, along with a bright tartness and notes of a deep, earthy, pepperiness from the grains of paradise.
T: Flavors follow the nose. I get some slight golden pear, tart lemon zest, mild drying oak tannins and slight oak butteriness as well, along with a juicy stone fruit quality at times.The grains of paradise is spicy but not necessarily peppery. Finish is full of apricots and stone fruits. Aftertaste is sweet, juicy and lingering. Chamomile isn't strong, and I wouldn't know it if I didn't know it wasn't in there, but there a nice herbal flowery soothing presence is the final flavor in the aftertaste and lingers after the swallow. Fresh tart bite, not overly acidic and no harshness.
M: Very soft and tingly carbonation, silky medium-full body, and an airy drying mouthfeel that isn't super tart, acidic or dry. Highly drinkable with a good bite but balancing smoothness and sweetness.
O: An interesting combination for sure but it works so well. Very delectable, bright and smooth, Subtle and complex. Well done, I could drink all day. My new favorite so far from TRB.
